Our Restaurant Quality Brisket Burgers are made from Grass Fed Irish Beef, blended with a simple pinch of Salt n’ Pepper. The texture of the Burgers is similar to a “Smashburger”, with the delicious flavour of seasoned beef. These are made as a 200 gram (7oz) generous patty for those larger appetites. We offer these 5 per pack  as better value for money.

What is in a Beef Brisket Burger?
The ingredients to our Brisket Burgers is simple; 98% meat & fat with 2% Salt n’ Pepper. As the name suggests, we mainly use Brisket for the main cut to give the Burgers a better texture & taste. We also add some Beef Flank with intramuscular fat content to enhance the flavour.
How do we make our Beef Brisket Burgers?
To make our 200 gram Brisket Burgers we select & trim good quality Beef Briskets from forequarters & choose some Boneless Flanks (for the added fat). The Black Pepper & Salt seasoning is pre blended by specialist suppliers.
The Briskets & Flanks are cut into smaller sized chunks before being ground up to a chunky consistency. The minced meat is then added to a mixing bowl where the 1% of Black Pepper & Salt is added & blended into the meat. The Burger meat mix is then almost frozen with Liquid Nitrogen passed around the outside of the grinding chamber as it is minced once more to a slightly finer grind.
This near frozen mix now gives the Burgers their characteristic texture & taste that people love. The Burgers are now pressed into a slight oval shape to an even thickness (12mm) length (130mm) width (107mm) they are then“Blast Frozen”. Making our Burgers in the thousands helps to create a more consistent flavour & texture for everyone made. It is important to have a Brisket burger you can enjoy every time you cook one.
The texture of our Brisket Burgers is very consistent with that of a good Beef Mince & can be broken in half before cooking to test there are no stringy bits showing the quality. The colour of our Burgers is not the “Traditional Bright Red” because we don’t add nitrates to the meat, our focus is on the flavour & texture. How are our Beef Brisket Burgers packed?
The Brisket Burgers are packed 5 per pack into a clear Recyclable Bag, clip tied for convenient resealing when storing in the freezer.
The Burgers are Individually Quick Frozen as they are made & packed in stacks of 5 pieces. The packs of 5 are then labelled will “Full Traceability” from farm to fork, you can see the production dates with frozen expiry dates, making it easy for you to check dates in your home freezer.
These are loose packed to make it easy to remove one or all the burgers from the packaging. The Brisket Burgers are placed into Recyclable Boxes, palletised & placed straight into the freezer at -18°c.
The speed & near frozen temperatures at which our Beef Brisket Burgers are made, gives them a 2 year shelf life when stored at -18°c. The benefits of “Blast Freezing” the Burgers is the meat is kept in perfect condition. The Brisket Burgers won’t loose any flavour, moisture or texture for 2 years, they taste exactly the same as when they were just made.
The bags protect the Burgers from other foodstuffs in the fridge, from freezer burn when stored & when in transit to your door. Placing 5 per pack reduces our plastic use by over 70% from previous packaging (much lower than supermarkets), this means less plastic per portion.
We always encourage our customers to “Reuse or Recycle” whenever possible, the clear plastic bags are easy to place into your home recycle bins at home. We are doing everything we can to find ways of becoming “Greener” in production, storage & delivery. Many of the production factories now have renewable energy sources; solar panels, wind turbines, making a much more eco friendly product.
The production factories are BRCGS / IFS approved & operate under the strictest of conditions. Monitored by on site health vets to ensure all cutting & hygiene regulations are followed at all times. The temperature controlled cutting rooms with filtered air means we can reduce natural bacteria growth & produce safer products with a longer shelf life. We reduce the amount of handling to a bear minimum & all staff have to wear protective gloves.
Provenance of our Beef.
We source all our Irish Grass Fed Beef from farms local to production in Ireland. The slaughterhouses / production plants are constantly supplied with a sustainable supply of top quality cattle. Local farmers have long term relationships with production to ensure continuity of supply all year round.
Our Irish Grass-Fed beef enjoys some of the best green pastures that Ireland has to offer, with the higher than average rainfall there is never a shortage of lush grass for them to enjoy. The welfare of all the cattle is very important, the modern process from farm to finished product is always very humane & efficient.
The select choice of breeds we use for our cuts; Charolais,Limousin, Angus, & Hereford, having good confirmation & delivering good yields. Most beef farmers & producers raise their cattle under “Bord Bia” guidelines. All our beef is fully traceable from farm to fork, with all cattle having digital passports, showing farmers details, breed, welfare etc.
