Fillet Steak:
The texture of Fillet Steak as most people will know is consistent & soft all the way through. The whole Beef Fillet Muscle or Tenderloin is a muscle that doesn’t have to work that hard, hence the reason for the smooth grain. Tenderloin is a relatively small muscle & has a low yield to create the steaks you have come to love, it’s because of this that they are one of the more expensive beef cuts.
A good quality steak should go a bright Red after it is exposed to the air, have a good beefy taste & cut easily before & after cooking (subject to being non cremated by the chef). These have very little fat which makes them a great treat whilst not breaking any rules for most meat inclusive diets. Therefore Friday night date night steak dinners are still on the menu!

At Sherwood, we cut, prepare & pack our products in very low temperatures as quickly as possible in order to deliver the best experience to our customers. The reasons we do this are; it gives a much longer shelf life to the meat, minimises the exposure to any bacteria in the air, & to keep all the natural flavour & moisture in the meat. The process from farm to fork is designed to maximise value for money & minimise waste, with welfare & the environment top of the list.

The improvements over the years in technology for recycling has reduced our carbon footprint & with our customers recycling responsibly at home is helping for a Greener Future. The trays are designed to keep the shape of the steak & protect it when in transit to your door. They stop any other food flavours from tainting the steak when in your fridge, also they are perfect for bringing up to room temperature in by preventing the meat from drying out.

Our Irish Grass-Fed beef enjoys some of the best green pastures that Ireland has to offer, with the higher than average rainfall there is never a shortage of lush grass for them to enjoy. The welfare of all the cattle is very important not only to the livestock but to the results it brings to the table.
All our beef is fully traceable through modern technology with animals now having virtual passports to ensure they are monitored from farm to fork.
