These are the perfect cut of beef if you are a fan of juicy Dinosaur Ribs. We have cut these as a 6 Rib Rack that will fit on your Barbecue & give you epic Beef Short Ribs for family & friends. The flavour of the Grass Fed Beef Jacobs Ladders is superb, with a tender pulled beef texture. The racks are 2.7-3Kg & are 6-7 inches wide with a single layer of meat across the rack.
Beef Jacobs ladders have been on the menus in America for a long time & have only been over in the UK for a while by comparison, in the last few years we have noticed a trend of people becoming more adventurous in their Barbecue cooks. They have gone from bangers n’ burgers, chops n’ steaks to Boston Butts, Beef Tomahawks, Beef Cheeks, Chicken Lollipops etc.
What are Beef Jacobs Ladders?
The Beef Jacobs Ladders are the meaty ribs between the Chuck & Brisket, Not the ribs cut from the plate flank.Â
The 6 bone Jacobs Ladders are from Ribs 2-7 on the rib cage. They are cut from Grass Fed Irish Beef & have the distinctive fat marbling through the meat. The Jacobs Ladders are meant for low & slow cooking.
We also offer the 3 Bone Beef Jacobs Ladders version in a single vacuum pack from the same delicious Irish beef.
How do we cut our Beef Jacobs Ladders?
The Jacobs Ladders are cut from the Fore Quarters of Good Heifers or Steers from Grass Fed Irish beef.
Expert butchers saw through the rib bones next to the chuck in a line down to rib 7, then make a parallel cut 6-7 inches across next to the brisket. The first 2 bones are discarded because there is little meat on it. The remaining 6 bones are then removed from the forequarter by cutting down the seam behind the rack. The excess fat is removed from the back of the rack exposing the silver membrane.
There is one single layer of meat across the bones & not 2. The reason we have the single layer is because it gives a more even cook & is much less fatty than the usual plate ribs or shorties as they are often referred to.
The meat quality of these is not the same as some two-layer offerings found on the internet cut from the flanks. The reason for this is the selection & the fact they are single layer from higher up the rib cage next to the brisket. The meat is more like the “Point End of Brisket” with a better texture.

All our beef Jacobs Ladders are vacuum sealed immediately after cutting & trimming. Each rack is individually vacuum sealed in special heat shrinking Clear Recyclable Bags. These packs are then boxed & palletised before going into the freezer at -18°c.

The meat has amazing flavour but, to get the best from this type of meat, it has to be cooked at lower temperatures for longer. It takes time for the meat to breakdown & release the natural juices whilst softening, when these are Smoked just right, they are “melt in your mouth tender!!

- Remove the Jacobs Ladders from the fridge & leave in the packaging leave on the side for a few hours.
- Take the plastic bag (place in recycle bin) off the meat & pat dry with paper towel.
- Remove the silver membrane from the meaty side & the thin invisible membrane from the bone side.
- Lightly season on both sides & around the edges 30 minutes before grilling.
- Place the Jacobs Ladders bone side down on indirect heat, 110-120°c, add wood chunks to your BBQ, it’ll give the meat an extra Smokey flavour.
- These are a low & slow cook, use your temperature probe to reach an internal temperature of 55-60c.
- Take your Ribs of the barbecue just prior to reaching temperature.
- Let them rest on a wooden board under a tea towel for 20 minutes.
Pro Tip:
The resting period allows the Beef Short Ribs to come up to temperature & finish cooking, whilst the meat absorbs its natural juices becoming more tender & juicier.
