Each Beef Oxtail is approx 1.3-1.7 kilo as these are a natural product & not handmade, they are all a little different in size. These are, as the name suggests, the beef tails & as they don’t really do much apart from swaying in the wind, the meat is very much like pulled pork when cooked. It has a gelatinous texture that is very moist & is easily removed from the bone to pull apart & serve.
When you normally buy Beef Oxtails they are cut into small pieces & you are charged for the service. We have kept ours in one piece for two reasons; firstly; the oxtails hold their moisture & colour perfectly. Secondly; they are very easy to cut at home with a sharp knife on a cutting board. First, these are cut & trimmed, then they are left to hang until just above frozen & they have “set up” ( the meat has had a chance to rest ) to ensure they are packed in the ideal condition & temperature before freezing.
