The Thor’s Hammer is a specially butchered back Leg of Beef.
This specialist Leg of Beef on the bone has exposed bone at the top portion & covered with thick Leg meat on the lower 2 Thirds. The shape of the The Beef Leg or Beef Shank resembles the large Hammer wielded by Mythological Norse God of Thunder “Thor”. This is a fibrous coarse cut of meat, the muscles that make up the meat on the bone have a higher sinew content as they are hard working muscles.
How do we cut the Beef Thor’s Hammer?
The Thor’s Hammer is the Back Leg of Beef French trimmed.
The Back Leg of Beef is cut through the joint, removed as a whole piece on the bone. The top muscle “The Heel” (mouse muscle) is separated from the main muscles attached to the bone as a single piece. The expert butchers cut across the grain of the meat on the bone approximately 2 Thirds of the way up & remove this section of meat from the bone. Once removed the exposed bone is cleaned of all meat, this whole piece has the top & bottom sawn across just enough to expose the inner “Bone Marrow”.
The Thor’s Hammers are only a few degrees above freezing when cut & packed, this stops the meat from loosing its natural moisture keeping it fresher tasting & producing a safer meat.
All our production facilities are BRCGS / IFS approved that make any of our meat cuts or products. All refrigerated air is filtered in production rooms, the butchers & packing staff wear fully protective clothing, these precautions reduce natural bacteria. How is Beef Thor’s Hammer Packed?
The Beef Thor’s Hammer is vacuum sealed 1 per pack.
The Thor’s Hammers are prepared & cut quickly to keep the meat as fresh as possible, they are approximately 3°c when packed. The Beef Hammers are placed into a special Freezer Friendly bag that is then vacuum sealed. The bags are then labelled with full farm to fork traceability, then placed into Recyclable Cardboard Boxes & palletised. The boxes are “Blast Frozen” to -25°c overnight giving the meat a 24 month frozen shelf life when kept at -18°c.
The freezer packs prevent “Freezer Burn” when stored at -18°c, & when chilled it prevents cross contamination between the meat & other foods. The packaging keeps the moisture in the Thor’s Hammer whilst chilled & when bringing up to room temperature before cooking.
