Before any cutting or preparation starts, the expert butchers select better quality Bone in Rump & Loins aged on the bone to harvest the Whole Fillets from. The Whole Fillet is carefully removed from the bones without cutting into the main muscle. The Fillet then has the all the excess fat removed along with the fatty chain muscle from the side of the fillet. The thin Silver Membrane is skinned off the top of the Fillet, the process of preparing the fillet to this level creates a Larder Trimmed Fillet.
 The Whole Beef Fillet / Tenderloin has 3 sections:
- The Head; top part of the Fillet at the back end of the piece.
- The Chateaubriand; the middle section (all trimmed clean).
- The Tail; this end of the Fillet tapers to a very thin strip, this piece of the Fillet Tail is mainly used for Stroganoff or recipes that require Strips of Beef.

- Place Beef Fillet in lowest part of the fridge to thaw slowly.
- Once thawed, take the Fillet & leave in packaging on the side to get to room temperature.
- 30 Mins before cooking, remove packaging & pat dry with paper towel.
- Season the meat all over with Salt & Pepper.
- Drizzle olive oil in a hot pan & Sear the Fillet all over (including the ends) until dark Brown.
- Once Seared brush your preferred mustard across the whole surface of the Fillet & wrap in your prepared pastry & Duxelles.
- Bake in the oven at 190°c for approx 30 mins. Probe the meat to see if internal temp is up to 60°c for Medium doneness.
- Rest the Wellington for 15 minutes to finish cooking & relaxing the meat.
