Where does Diced Beef come from?
We choose one of the best steak cuts to make our diced beef; The Tri Tip Steak. The Tri Tip comes from the end of the Rump Steak. This referred to as a “Rump Tail” or “Bottom Sirloin” in America. This steak is a very popular choice cut of meat that is often smoked “Low & Slow” on the Barbecue.Â
The texture of our Beef is not too coarse because the Tri Tip comes from the end of the Rump Steak & this cut is tender & juicy when grilled. The flavour from our Beef is rich because it has a little fat marbling throughout the grain. The meat fibres break down easier becoming very tender because it has a good grain & texture.
Most butchers or supermarkets will use cheaper cuts with more sinew inside to try & to make cheaper. This is false economy because there is more waste & the eating experience is sacrificed. The reason we use the Tri Tip is to offer Diced Beef without sinews or gristle, delivering great flavour with a “Melt in your mouth” experience.
How do we cut our Diced Beef?
We select our Tri Tip steaks from good quality Grass Fed beef, these are then fully trimmed up, leaving no fat or skin on the outside. This process is called “P A D” (Prepared And Degristled), leaving only the best natural intramuscular fat in the meat. This fat renders down during slow cooking, adding to the flavour & moisture of the beef.
Once the Tri Tip Steaks are completely trimmed, these are then placed into a clean dicing machine that makes 15mm cubes. The size of the cubed beef is big enough to retain more moisture & flavour when cooking, rather than small cubes that dry out.
How do we pack Diced Beef?
We pack the Diced Beef in 500g quantities, suitable for making smaller shared meals, helping to reduce food waste in the home. The 500g packs are a perfect addition for your online shopping basket, stocking up for those mid week family meals.
These are very popular & we also have the same cut of beef available as Beef Steak Strips that are cut thinner so they can be used in Stroganoffs, stir fry recipes, this means you don’t need to do any preparation work.
The Diced Beef is packed into Clear Recyclable Pouches immediately after cutting. The packs are boxed & palletised then placed straight into the “Blast Freezer” & frozen down to -18°c over a few hours. This ensures your meat stays fresh frozen for up to 2 years with the same flavour & texture from the day it was packed.
All our production facilities are BRCGS / IFS approved that make any of our meat cuts or products. All refrigerated air is filtered in production rooms, the butchers & packing staff wear fully protective clothing, these precautions reduce natural bacteria. The Recyclable packaging we use is now stronger & thinner to reduce the amount of plastic we use annually in production.
