Jacobs Ladders Cut Into Our Delicious Korean Beef Ribs:
The meat on our Korean Beef Ribs is the same as the “Intercostal Beef Rib Finger” meat, it has great fat marbling, giving these such a great flavour. The meat is fairly coarse & becomes very tender when cooked because of the fat marbling rendering down during grilling or cooking. Each slice is carefully cut by our expert butchers on a bandsaw, using a guide for better accuracy to keep the slices more uniform.
Why we cut our Korean Beef Ribs from our Beef Jacobs Ladders
Our Beef Jacobs Ladders are cut from the rib cage between the Brisket & the Chuck, we only use ribs 3/4/5 & cut them approximately 7 inches long, these are where your Korean Beef Ribs are cut from. The Korean Beef Ribs are parallel cut to keep the thickness uniform so that your cooks are more consistent through the whole piece. These pieces don’t take long to cook on the grill & the fat marbling keeps them moist during your cook.
The lower part of the beef rib cage is called the Flank or Beef Plate, ribs 6-10; our expert butchers remove the whole section on the bone as a piece. We would trim or use this end for different commercial applications as they have two layers of meat which carry to much excess fat for this particular cut. These are widely used in many butchers shops to sell as Jacobs Ladders or short Ribs, most people don’t really know what they are looking for or being sold.
The meat has a coarse texture that when cooked slowly at a lower temperature, becoming very soft & easy to chew. The bones still have their marrow in them & depending on how you cook them, can be used to add extra flavour to the meat.
Remember that “Fat is flavour” in our Korean Beef Ribs
These types of beef ribs are normally found in Korean restaurants, specialist Asian or Korean butchers & occasionally a Barbecue restaurant. These are a fantastic cut with much interest in the Korean community & are now becoming more sought after in Europe. Like this & many other specialist meat cuts, people normally only find out about them through visiting one of the aforementioned places or through social media.
As specialist cuts are hard to find a consistent supply of, just like our Beef Jacobs Ladders, Pork Boston Butts or Chicken Lollipops we hope to bring more meat cuts like this to our website in the future & make them available to buy online.
The beef has been aged for a few days on the bone before cutting as we don’t want them to dry out in the chillers because they are a naturally thinner whole piece. When beef is left on the bone longer & the bones have been sawn, it normally gives a shortened shelf life. We get around this by cutting & packing within a few minutes before they are placed into a blast freezer. The freezing process stops any deterioration & preserves all the flavour & moisture instantly.
We vacuum seal the Korean Beef Ribs into recyclable clear pouches which gently hold the shape of the piece & the vacuum process keeps all the moisture in the meat. They are vacuum-sealed in small packs for your convenience & ease of storage, they can be bought up to room temperature without drying out before cooking. Less waste & more meat gives you better value for money, good quality meat cut right gives you more meat for your money #moremeatfym
