What are Korean Beef Ribs?
The familiar look of these Beef Ribs are single round cross sections of Bone with meat in between & on one edge of the Bone. These are a cut of meat cooked on the Barbecue or Hotplate, usually marinated first with a more Asian type of flavouring.
The Korean Beef Ribs are also known as LA Galbi, this name was given to them because the local Korean Community wanted an easier solution to cutting & preparing the Beef Ribs. They had the whole racks of Jacobs Ladders pre sliced, making them ready to season & easier to cook.
The meat on our Korean Beef Ribs is the same as the “Intercostal Beef Rib Finger” meat, it has great fat marbling, giving these such a great flavour. The meat is fairly coarse & fat marbled becoming very tender when cooked because of the fat marbling rendering down during grilling or cooking.
How are Korean Beef Ribs made?
Our expert butchers cut the Korean Beef Ribs from our fresh cut Irish Grass Fed 4 Bone Beef Jacobs Ladders.
The whole Jacobs Ladders are “Blast Frozen” to –25°c immediately after cutting to prepare them for slicing into Korean Ribs (La Galbi). The bone in Jacobs Ladders are then placed into a special circular saw machine, this is then set to cut the Beef into 12mm slices. The slices are then checked before being placing into large sterile reusable plastic containers & sent to the packing room.
Our 4 Bone Beef Jacobs Ladders are parallel cut from high up on the rib cage between the Brisket & the Chuck. Only Ribs 3/4/5/6 are used, these are approximately 7 inches long. The meat is fibrous & fairly fatty with a single layer of delicious meat across the back of the Rib Rack. We choose not to use the lower section of the rib cage as they are too fatty & don’t produce the same amount of meat.
The lower part of the Beef Rib Cage is called the Flank or Beef Plate, Ribs 6-10; our expert butchers remove the whole section on the bone as a piece. We would trim or use this end for different commercial applications as they have two layers of meat which carry to much excess fat for this particular cut. These are widely used in many butchers shops to sell as Jacobs Ladders or short Ribs.
How do we pack out Korean Beef Ribs?
We pack the Korean Beef Ribs from frozen straight after cutting, placing them into Clear Recyclable Plastic Pouches (multiple slices) of approx 800g.
The system of packing used for these Korean Ribs is a called Deep Track Packing. This is an automated system that requires minimal direct handling of the meat, reducing surface bacteria transfer. The slices of Korean ribs are placed into deep pouches in neat stacks to allow for better sealing of the meat. The pouches pass through a vacuum sealing machine shrinking the protective pouch around the meat.
The frozen packs are then labelled with Full Traceability & placed into reusable plastic crates, stacked on pallets & placed back into the freezer ready for shipping to our distribution or direct to wholesale customers. The cutting process & the Freezer Friendly packs give a just cut flavour to the meat, up to 2 years after production.
All our cutting & packing facilities are BRCGS / IFS approved that make any of our meat cuts or products. All refrigerated air is filtered in production rooms, the butchers & packing staff wear fully protective clothing, these precautions reduce natural bacteria. Operated with the highest hygiene & temperature controls to ensure you enjoy the same taste & texture from all our meats.
The packaging protects the Korean Ribs from freezer burn, contamination from other foodstuffs when kept refrigerated & during delivery to your door. Our Irish Grass-Fed beef enjoys some of the best green pastures that Ireland has to offer, with the higher than average rainfall there is never a shortage of lush grass for them to enjoy. The welfare of all the cattle is very important, the less stress to the cattle, the better results it brings to the table. The process from farm to finished product is always very humane & efficient.
The select choice of breeds we use for our cuts; Charolais, Limousin, Angus, & Hereford, having good confirmation & delivering good yields. Most beef farmers & producers raise their cattle under “Bord Bia” guidelines. All our beef is fully traceable from farm to fork, with all cattle having digital passports, showing farmers details, breed, welfare etc.

These are 12 mm thick so, only need short amount of time to cook thoroughly, the even thickness of the meat helps to ensure the meat all cooks at the same rate, this prevents undercooked / overcooked areas in the meat. The Korean Ribs can be marinated overnight or seasoned 30 minutes before cooking, getting a good infusion of extra flavourings into the meat.
