The Beef we use is all Grass Fed to make our mince, sourced locally in Ireland & grazed most of the year giving its unique flavour. The process from farm to finished product is always very humane & efficient using modern euthanasia techniques for all cattle.
How is our Lean Beef Mince made?
We produce our Minced Beef from quality cuts that are finely ground.
Our expert butchers select out whole Chuck Steak, primal cuts & some whole Lean Flanks, these are then trimmed (to remove unwanted gristle) before grinding. The Chuck, Flank & Brisket is mixed before the first coarse grind to balance the taste, the second grind of the meat is through a “Fine Plate” on the mincer to give its finished texture.
We choose cuts of beef from the Forequarter or Shoulder to make our Beef Mince because they are more “Fibrous” & breakdown to become more tender during cooking. The coarse meat cuts always have more flavour as they are hard working muscles with a high protein content. The flavour of the mince is a good balance between a bland meaty taste & the overwhelming ( more common ) fatty experience.
The Beef cuts used in our Premium Mince is the same as our Beef Brisket Burgers, the combination of cuts brings great flavour to your recipes.

Once the Mince is packed, the packs are labelled with full Farm to Fork Traceability, the trays are put into reusable plastic crates or into Recyclable Boxes for Wholesale Customers. Everything is “Blast Frozen” to -25°c overnight giving the meat a 24 month frozen shelf life when kept at -18°c.
The sealed recyclable trays protect your meat whilst they are delivered to your door, these stop any cross contamination from other food stuffs in your fridge. The production rooms have filtered chilled air, keeping our production rooms heavily chilled, this reduces any growth of natural bacteria on the meat or cutting surfaces.
All our production facilities are of the highest standards & are BRCGS Approved producing the safest meat cuts possible. The butchers & production staff all wear fully protective clothing, with mandatory health checks before commencing work.
