Sherwood Grass Fed Shin of Beef is a coarse cut of meat with superb flavour ideally suited for Low & Slow Cooking. This cut of Beef is perfect for making stews or Caribbean style recipes. The meat is very tender once slow cooked & rested before serving, the coarse grained texture breaks down & comes apart very easily. To reduce food waste at home we have cut the whole Shin of Beef in half across the grain to make a piece that is approx 1 kilo.
What is Shin of Beef?
The Beef Shin is from the upper section of the cow front leg.
The Shin of Beef is leaner & smaller than the back leg, it has familiar Sliver Gristle running through the muscles (these reduce when cooking), you can see these when cutting across the piece. The Beef Shin has had the single bone removed & left the meat as one piece. The cuts of Beef that have the most flavour are usually from the harder working muscle groups, where the meat is much coarser. The Shin is typical of one of the hardest working muscles, it has some of the best flavour of the whole cow.
How do we cut the Shin of Beef?
This is a boneless half piece of Shin cut in half.
Our expert butchers remove the whole Beef Shin on the bone through the top joint on the Forequarter. The Shin meat is then cut from the bone as one single piece, this looks like a butterflied cut of beef. The thick gristles are cut from both ends of the Boneless Shin, leaving a leaner piece of Beef. The whole Boneless piece is then cut in half across the grain, this makes a more manageable, 1 kilo family sized portion. Trimming up the Shin reduces Food Waste & saves time in preparation.
How is Shin of Beef Packed?
We pack our Beef Shin in vacuum sealed pouches immediately after cutting.
Packing the Shin of Beef as soon as it is cut gives the best tasting, juicy results when cooking. The quicker you cut & pack, the more natural moisture & flavour is retained in the meat. Once the Beef is packaged, it is labelled with full traceability, boxed up & frozen down to -18°c to keep that “Just cut flavour” in the meat.
Our process of cutting, packing & freezing creates a fresh tasting safe meat that has a 2 year shelf life when stored at -18°c. The packaging stops “Freezer Burn” when stored at -18°c, & when kept chilled the packaging prevents cross contamination between the meat & other foods. The packaging keeps the moisture in the Shin whilst chilled & when you are bringing up to room temperature before cooking.
