The Shin of Beef weighs approximately 1 kilo & will have little waste to be trimmed in preparation for cooking. The meat content is muscular & leaner than the back leg which makes this a perfect piece to try recipes from Africa or the Caribbean. The best way to cook shin of beef is to use lower temperatures for longer because it allows the meat fibres to break down becoming very soft & tender. So braising or stewing is perfect for a cut like this, releasing the great flavour of our grass-fed beef.
Historically the “shin or leg of beef” has always been a cheaper cut & more readily available to families on a lesser income, & it’s because of this that all these wonderful recipes have been created through the need to improvise with standard ingredients. Simple stews or casseroles provided all the nutrients needed for the family, but as expert chefs are now trying out some more traditional cuts of beef like this, we are now seeing more inventive ways of cooking shin of beef, with some stunning results.
All our beef products are cut in hygienic, temperature-controlled cutting rooms & packed within a few minutes to ensure we create the safest, freshest products possible before freezing to -18°C to make sure they are kept in perfect condition. We vacuum seal the meat in clear recyclable pouches as the process sucks any natural juices back into the meat, keeping it moist, & the pouches hold the shape of the meat. Vacuum sealing meat is the safest way of keeping meat preventing the natural bacteria found in meat from multiplying, & the low temperatures during the processing reduce risk further.
