With their distinctive “T Bone” in the middle, our T Bone Steaks are in cut as 2 sizes, 16oz (454g) & 32oz (900g), & are excellent value for money. Cut from Irish Grass Fed Beef they are tender & flavoursome steaks on the bone. The natural enzymes found in meat helps to breakdown the natural fibre of the meat to become more tender, & through this process, it unlocks the flavour to let the juices flow naturally. What is a Beef T Bone Steak?
A T Bone Steak is the Fillet Steak & the Sirloin Steak on the bone. The bone is “T Shaped”, this is the combination of a lumbar bone & a section of the spine bone.
The 2 sizes of T Bone Steaks available to buy online:
- 16oz / 454 grams: single large portioned steak.
- 32oz / 900 grams: Monster sized portion, great for sharing.
These steaks are cut from the section of the Loin with the Fillet attached, to give a slice with both muscles in them. The T Bones are a large steak that is the more expensive one on the restaurant menu, made for sharing or a large portion. You can also get T Bone Steaks from Veal, Pork & Lamb, these are normally called Chops as they are smaller sized cuts.
What is the difference between Beef T Bone Steaks & Porterhouse Steaks?
T Bone Steaks have a small amount of Fillet Steak attached to the bone & has the full Sirloin Steak attached on the other side of the bone. These are cut from more towards the “Rib end of the Loin” with less Fillet muscle.
A Porterhouse Steak has a larger portion of Fillet Steak attached to the bone & also has the full Sirloin Steak attached on the other side of the bone. These are cut from more towards the “Rump end of the Loin” with more Fillet muscle.
How do we cut Beef T Bone Steaks?
Our expert butchers cut the Steaks from the lower end of the Beef Loin with the Fillet attached, these are cut to approximately 32oz / 900g.
The Grass Fed Loins are selected from top grade Beef Hind Quarters, the rib end of the Loin is cut off as a section (later boned out for Sirloin Steaks). The Half Fillet End Loins are then aged in the chillers at 2°c as a piece. Once aged the Half Loins are trimmed, leaving a thin layer of fat around the outer edge of the Sirloin section, these whole pieces are then “Blast Frozen” to -25°c. Freezing the whole piece ensures that all the natural flavour & moisture remains locked in when cutting the steaks.
The Half Loins are then taken to the temperature controlled cutting room & sliced into uniform thick steaks. We use an electric Band Saw for the slicing as this is more efficient & hygienic. The 32oz T Bone Steaks are 40mm thick. The thickness can vary depending on the size of the Half Loins; none of the cattle are the same size & weight that they come from. These are hand cut steaks & we try to select similar sized Half Loins to make them as weight consistent as possible.
How are Beef T Bone Steaks packed?
Once the Steaks are cut & trimmed they are vacuum packed whilst frozen, this reduces any risk of natural bacteria getting on the surface of the Steaks.
Each Steak is Vacuum Sealed in a Clear Recyclable Plastic Pouch, each pack is the labelled with Full Traceability from Farm to Fork. The Steaks are packed into reusable strong plastic crates, placed on pallets & put back into the freezer at -18°c. The Steaks have a 2 year frozen shelf life when stored in our Freezer Friendly Packs.
All our production facilities are BRCGS / IFS approved that make any of our meat cuts or products. All refrigerated air is filtered in production rooms, the butchers & packing staff wear fully protective clothing, these precautions reduce natural bacteria.
