Sherwood Texas Hot Links are a super juicy sausage that makes your mouth water with a mild kick!

Using only our finest Irish Beef & Pie Train Pork, these Texas Hot links have a perfect blend of the two different meats & the spices bring out the flavour of both. Both meats are minced on a medium grind & because of the select meat, there is NO Gristle making the texture a little chunky & more enjoyable.

There are 2 Texas Hot links per pack at 150-grams each, vacuum sealed for extra freshness.

Awesome Texas Hot Links For Home Barbeque Cooking:

When eating one of our Texas Hot Links sausages at home, you want it to be enjoyed by all the family, this is why we have made them with a mild heat, & the smokey flavour from the Barbeque is always a hit with teenagers.

Most sausages available are made to use up belly trimmings & fat created from the production of other pork cuts. At Sherwood, we make all our pork sausages  specifically from the pork shoulder & only back fat from the loin. The lean muscles from the shoulder are the best for flavour & texture because they are coarse & very moist, guaranteed to give great results every time. These cuts become very tender when cooked & make the sausages far more enjoyable to bite.

The fibrous nature of the cuts we use to make our Texas Hot Links are perfect to absorb the added Texas seasonings, as they need to set up overnight once made.

What does it mean buy setting up? Once our Texas Hot Links are made, we leave vacuum seal them to hold in all the moisture & flavours, this process sucks all this into the meat. This process is done at low chilled temperatures, once completed all the Texas Hot Links are left inside the chillers for 24 hours to “set up”. The reason we do this to all our sausages is because the seasonings need to have time to infuse with the meat, giving it the added flavour.

This way you get a far better result for more blended Texas Hot Links sausages, or any sausage we make.

In our Texas Hot Links we do not add any rusk because they are a meaty sausage that is all about the chunks, this is why we put this through a grind that is medium coarse.

All our sausages have a good meat content as we want them to be enjoyed for their meaty flavour & most of these are more of a smooth textured sausage & this is why we add the rusk to help the consistency with the majority of the ones we make.

The Texas Hot Links are all about the meat with a little heat!

When cooking at home you want to have healthier, better tasting sausages that are not in a cheap skin with a chewy bite, & absolutely NO GRISTLE ! The shoulder is not the cheapest cut to make Texas Hot Links from, but it always delivers when served. There are many breeds of pigs in the world, each with different characteristics, some large fatty ones, to small very lean types. Our choice of pig is the Pietrain Pig because it is a low cholesterol breed that has fantastic meat to fat ratio that has excellent flavour with guaranteed results in the kitchen.

Having access to a large volume of a good grade, perfect sized pork sides to choose from on a daily basis enables us to create the consistent “Restaurant Quality” pork cuts that people have come to expect from the Sherwood brand. We have daily delivery of pigs to the production facilities from long standing local countryside farms in Belgium & Northern France.

Our select breed of pigs gets the name Pietrain from the small village of “Pietrain” in the Wallonia region of Belgium where they mainly originated from.

Our Irish Grass-Fed cattle are some of the best in the world, with plenty of quality air & lush Green pastures to graze on in the summer months. The flavour of the beef is consistent & unique, the meat is leaner than that of Grain-Fed cattle & makes for meatier flavoured Texas Hot Links.
