The Drumstick is then separated from the Thigh through the joint carefully so as not to damage the ends of the bones & create bone fragments. The single Femur bone is removed cleanly to leave as much meat on the Thigh as possible. Any excess fat is removed & the skin is left on but trimmed down to leave an even cover over the Thigh Meat.
