Chicken Breasts or Fillets can be bought everywhere, most “off the shelf” chicken fillets are around 160-grams & not very thick, many have had water added during the production process to increase their weight, sell at a lower price & increase profit.
Please see the link as to Why we don’t add water to our chicken, it will surprise you to see why some places offer chicken at very cheap prices.
What are Chicken Fillets?
A Chicken Fillet is a skinless Breast of Chicken with the bones removed. These should be natural with NO ADDED WATER or SALT, light in colour & no visible bruising. Our Fillets are 200g+ each & of a good thickness.
We have other items available to buy that are already prepared made from our Chicken Fillets; try our Meaty Chicken Skewers or our Marinated Chicken Skewers, ready to cook & all vacuum sealed for the extra freshness.
How do we cut our Chicken Fillets?
The Fillets are cut from the top of the Breast Bones, sometimes called the Chicken Crown. The size selection of Chickens used to make the Fillets is from calibrated 1.6 kilo whole chickens to give more even, larger portion sizes. The whole chickens are chilled to 1-2°c to reduce moisture loss & minimize natural bacteria growth.
The expert butchers remove the wings from the breasts & pull the skin off the top. Next, they cut between the breasts from the top to separate them & pull the meat from the bone. The Chicken Fillets are now boneless & skinless, these are then trimmed up removing any excess fat or cartilage. The fillets are then placed on a weighing conveyor belt that weighs for their final calibration before packing.
How are our Chicken Fillets packed?
All of our chicken cuts are very cold before any packing; approx 1-2°c. The Chicken Fillets are packed within a few minutes of being freshly cut, this keeps the moisture & flavour in the meat. The Chicken Fillets are vacuum sealed into Recyclable Clear Plastic Pouches. The bags are then labelled with full traceability & packed into recycled cardboard boxes.
The boxes are palletised & “Blast Frozen” to -18°c over the next few hours, giving a 2 year shelf life when kept below -18°c. Please see this link about Blast Freezing & the benefits when freezing meats; The Benefits of Blast Freezing Meats.
The clear recyclable trays protect your Chicken Supremes from any damage during delivery, any contamination from other foodstuffs in your fridge & they are perfect for frozen storage. The pouches now used are stronger & thinner than before as we are reducing our Carbon Footprint for a Greener Future. Less packaging means less energy needed to make & recycle plastic.
To further help us towards our goal for a Greener Future, we ask that all our wholesale & online customers recycle responsibly.
All our production plants are BRCGS / IFS approved & operate under the strictest of conditions. Monitored by on site health vets to ensure all cutting & hygiene practises are followed at all times. The temperature controlled cutting rooms with filtered air means we can reduce natural bacteria growth & produce safer products with a longer shelf life. The process from farm to finished product is a very humane & efficient.

How do you cook Chicken Fillets?
To use you chicken, place into the fridge a few days before cooking, to defrost. The best way to thaw out Chicken fillets is to leave them in their Skin Packed Trays at the bottom of your fridge to thaw out slowly, because the meat relaxes gradually not damaging the cells in the meat & leaves you with lovely fresh chicken.
Firstly, remove the Fillets from the fridge an hour before cooking (leave in the packet), this brings the internal temperature of the meat up & relaxes the meat fibres. This first step is important when cooking with any meats because you get a more even cook with tastier juicy results.
Chicken Fillets can be cooked in the oven, in the pan, Air Fryer or on the Barbecue. Cooking in a casserole dish with stock & added vegetables is a great way to get the added ingredients to infuse their flavours into the meat. Cooking in the pan is quicker & easier to get a delicious crispy skin. Grilling Chicken Breasts on the Barbecue is a must if you love Smokey tasting meat with delicious grill marks.
Cooking times for Chicken Fillets:
- Oven at 180°c 30-40 minutes
- Pan Med Heat 15-20 minutes (turning regularly to prevent burning)
- Air Fried 20minutes (turn after 10 minutes to keep moist)
- Barbecue Grilled Indirect Heat for 20 minutes.
Please note that for safe cooking; make sure the chicken is cooked all the way through & the juices run clear. You need to have a minimum temperature of 74°c in the middle of the Fillet.
PRO TIP:
Rest your Chicken on a wooden board covered in a tea towel for 10 minutes before serving. This allows the meat fibres to relax & absorb their natural juices for great results every time.

When cooking with Chicken Fillets you need them to be a good-sized portion to give the flexibility to create different meals. Our Chicken Fillets are approximately 300-350-grams each so you can make any chicken breast recipe with these. If the fillet is too thin, you are unable to make stuffed chicken breast recipes, our breasts can be sliced down the middle to create two portions from one piece.
As our Chicken Fillets Don’t Have Any Added Water, they lose less water during cooking, they retain their natural moisture better because of their thickness, the meat has a more natural texture when cooked.
