What are Oyster Cut Chicken Legs?
The Chicken Legs are made up of Drumsticks & Thighs, the term “Oyster Cut” comes from the way the butchers remove the thigh from the main carcass. The Thigh is soft & the Drumstick is a little coarser, the Drumstick has a richer flavour & the Thigh has a more delicate flavour. The colour of the meat is light in the Thigh & dark in the Drumstick because it is a harder working muscle.
How do we cut Chicken Legs?
We cut our 250 gram Chicken Legs as an Oyster Cut & they are cut by scooping out round the end of the Femur Bone taking only the soft meat from the carcass & leaving the spine bones behind. The 2 bones remain inside the Leg & Thigh, with a little soft cartilage at the knee joint.
In this video you can see where the “Chicken Oyster Cuts” come from, & how tender the meat is. This is better because there is less chance of any bone fragments & the result is more meat less bone.
Sherwood Whole Chickens are separated into 3 different sizes before any cutting because this enables us to create more equal sized portions for easier home cooking. The quality of our chicken is A Grade as we have it produced locally from better run farms, & we don’t add any water to the meat to increase weight.
How are Chicken Legs packed?
The Legs are packed only a few minutes after cutting, with 2 portions vacuum sealed in each Recyclable Skin Pack.
Once the Legs are cut, they are immediately passed to the packing team & placed onto sterile Clear Recyclable Trays. The trays then have a thin layer of plastic film laid across the top of the meat & the tray is then vacuum sealed, creating “Skin Packed Tray”. These Skin Packs lock in all the natural flavour & moisture into the Chicken Legs.
Once the packs are sealed, they are then labelled with “Full Farm to Fork Traceability”.On the labels you have a QR Code to scan, this directs you to all the recipes on how to cook Chicken Legs on the website. The trays are then labelled & packed into Recyclable Boxes, the boxes are then palletised & placed into the Blast Freezer, the meat is frozen down to -18°c in a few hours.
The benefits of “Blast Freezing” meat are excellent, the Chicken Legs retain all their natural flavour & moisture for 2 years, tasting like they have just been cut.
All our production plants are BRCGS / IFS approved & operate under the strictest of conditions. Constantly supervised by on site health vets to ensure all cutting & hygiene processes are adhered to. Provenance of our Chicken
Sourcing all our chicken locally to the production plant enables us to have access to good quality A Grade chicken from sustainable sources. Having built up relationships with local chicken farmers, the chickens supplied very consistent in size & quality, & able to meet our demands for higher volumes when needed.
All the local farms that supply production meet the highest European standards as quality & safety are our main priorities when buying our chicken. The chickens are checked & monitored 24 hours a day in temperature-controlled environments. The Chicken Sheds are very large & well ventilated so that the chickens have room to move about. With a controlled diet the chickens grow to healthy sized birds that produce a good yield.
How to cook Chicken Legs.
Remove the Legs from the fridge an hour before cooking (leave in the pack), this brings the internal temperature up & relaxes the meat. This first step is important when cooking with any meats because you get a more even cook with tastier juicy results.
Chicken Legs are a great favourite for cooking on the Barbecue for that extra special Smokey flavour, many people buy these as a go to food that is a “no fuss” cook. The skin is gorgeously done a little crispy & the meat loves the modern great Barbecue rubs that are now available. These give great results when turning every 5-10 mins for around 30 mins & using a meat thermometer you want to aim for an internal temp of 75°c in the thick part of the thigh.
Alternatively, these are simple to season wrap & place in the oven to bake for 20-25 mins at 200°c, finish unwrapped to crisp the skin for a few mins. Always make sure the juices run clear before serving because it shows that the meat is cooked thoroughly, preventing food poisoning.
Cooking times for Chicken Legs;
- Oven at 180°c 35-40 minutes
- Under the Grill 30 minutes, turn regularly to prevent burning.
- Barbecue Grilled Indirect Heat for 20 minutes finish on direct heat until skin is crispy & meat is not Pink inside.
Please note that for safe cooking; make sure the chicken is cooked all the way through & the juices run clear. You need to have a minimum temperature of 74°c in the middle of the Thigh.
