Ready To Cook Spatchcock Chicken:Â
Our expert butchers have selected our Sherwood Whole Chickens  with nice plump breasts & fuller legs before production to ensure they make for a meaty Spatchcock Chicken. The quality of our chicken is A Grade because it’s locally sourced from well run farms & all chicken is QC (Quality Controlled) before cutting, & no water is added to the meat.
High quality chicken is a superb source of natural minerals, vitamins & protein, this is why it is recommended in many healthy eating plans & diets. By making sure we only use the best A Grade chicken for all of our products, we are able to supply high quality chicken products to our wholesale & online customers.
The chicken has light coloured breast meat with a good consistent texture, the thigh meat is a little coarser & lighter in colour. The leg meat is always a little darker & coarser because it does all the work (as the chickens are a flightless bird), the flavour of the leg meat is stronger, but has more flavour.
The meat will be very tender & soft with an easy bite that is not chewy for a better eating experience. These are great when feeding the family because you have the choice of light or dark meat with the leg & breast, & there is enough to feed everyone.
Our expert butchers prepare the Spatchcock Chicken by first cleaning the inside & removing any internal organs, they then trim any excess fat / skin before finally cutting down both sides of the spine to remove unwanted bones. This leaves a whole spatchcock chicken ready to be seasoned for the barbecue or oven.
A ready prepared Spatchcock Chicken has a higher meat to bone ratio giving you much better value for money because the weight you buy is the weight you cook.
The Spatchcock Chicken is cut & packed within a few minutes to minimise exposure to the air & to ensure that all moisture & flavour is retained. Each chicken is individually vacuum packed into recyclable clear pouches making them as fresh as possible before freezing to -18°C. The chicken is only 1-2°C when packed because the very low temperatures help the meat retain all its natural moisture & to ensure that the meat is as safe as possible.
The clear pouches protect the Spatchcock Chicken from freezer burn, any contaminants, any damage during delivery & from drying out when in the fridge at home. The clear recyclable pouches we currently use are now thinner & stronger because we are trying to reduce our Carbon Footprint. By reducing the amount of waste created through excess packaging, we also reduce the amount of energy needed to produce our products.
To further help us towards our goal for a Greener Future, we ask that all our wholesale & online customers recycle responsibly to complete the recycling process.
All our production plants are BRC / IFS approved & operate under the strictest of conditions. Constantly supervised by on site health vets to ensure all cutting & hygiene processes are adhered to. The temperature controlled cutting rooms with filtered air means we can reduce natural bacteria growth & produce safer products with a longer shelf life. The process from farm to finished product is a very humane & efficient.
Sourcing all our chicken locally to the production plant enables us to have access to good quality chicken with sustainable supplies. Having built up relationships with local chicken farmers, the chickens supplied very consistent in size & quality, & able to meet our demands for higher volumes when needed.
All the local farms that supply production meet the highest European standards as quality & safety are our main priorities when buying our chicken. The chickens are checked & monitored 24 hours a day in temperature-controlled environments. The Chicken Sheds are very large & well ventilated so that the chickens have room to move about. With a controlled diet the chickens grow to healthy sized birds that produce a good yield.
Cooking a Spatchcock Chicken as opposed to a Whole Chicken has 2 advantages; it cooks more evenly because it is open & can be turned during the cook, thus cooking the inside & outside. You are able to place seasoning all over the chicken to get a higher infusion of flavours into the meat.
