Spatchcock Chicken are most commonly cooked “Butterfly Style” on the Barbecue, feeding 4-5 people. These are a great sharing meat that has a delicious Smokey flavour when BBQ’ed. Selected from our Grade A Chicken, they have NO Added Water so the meat has a better texture, giving you much more meat for your money. The Spatchcocks are approx 1.5Kg each, packed in clear recyclable pouches.
What is a Spatchcock Chicken?
The Spatchcock Chicken is essentially a skin on Whole Chicken with the backbones completely removed (including the Parsons Nose) & laid out in a Butterfly Style.
The term of “Spatchcock” is used in reference to poultry & is thought to be shortened version of “dispatching the cock”. The meaning; is splitting the bird & removing the backbones for faster more even cooking.
Each Chicken has 2 Breasts, 2 Legs, 2 wings & are fully cleaned internally with no internal organs. The Breasts have lighter leaner meat, the leg meat is a little darker & coarser but juicier with more fat content. The leg meat is always a little darker & coarser because it does all the work (as the chickens are a flightless bird), the flavour of the leg meat is stronger, but has more flavour.
How do we make Spatchcock Chickens?
Larger Chickens are selected for production, these are approximately 1.7Kg each, chilled down to an internal temperature of 1-2°c. They are checked for any bruising & feathers before making the Spatchcock Chickens. Expert butchers stand the Chickens on their ends with the breasts facing away from them. They use a sharp knife to cut down each side of the backbones & remove the complete section to leave the Chicken Spatchcocked at 1.5Kg.
How are Spatchcock Chickens packed?
We pack our Spatchcocked Chickens 1 per recycled clear plastic pouch as soon as they are cut, this reduces the amount of natural airborne bacteria around the meat. We vacuum seal the Chickens locking in all their natural flavour & moisture. The Chicken is boxed & placed on pallets, they are then put into a Blast Freezer & frozen down to (-18°c)over a few hours. This method of packing & freezing creates a fresh frozen chicken with a 2 year shelf life, that tastes as if it had just been made.
The Clear Recycled Pouches keep your Chicken safe when handled before preparation, when you are bringing the meat up to temperature before cooking. The plastic pouches protect your Chicken from Freezer Burn & other foodstuffs when stored in the fridge. Vacuum sealed Chicken has a much longer shelf life than chicken in loose plastic trays.
The clear recyclable pouches are now stronger & thinner than before, this is to reduce our annual plastic use so we can “Reduce our Carbon Footprint”. Less packaging reduces the amount needed per portion & also reduces the energy needed to make finished meats.

The process from farm to fork is all done under the strictest rules & clean practises, with all premises being BRCGS / IFS approved. There are on site health officials monitoring the slaughter, cutting & packing stages ensuring safe products are made. The Chickens have plump breasts & thicker legs with a bigger amount of meat on the bone. You are able to serve more substantial portions per person for one Chicken. We only use Natural chickens that have No Added Water, giving you better value for money. The Chicken loses less weight whilst cooking when they have their own natural juices, the weight you buy is closer to the final cooked weight.

How to cook Spatchcock Chicken.
Most Spatchcock Chickens are Barbecued or Oven Roasted as a flat piece for a more even cook & the best crispy skin.
- Remove from the fridge (keeping the Chicken in the bag) leave in ambient temperature for 30 mins to bring up to temperature
- Take the Chicken from the pouch & pat dry with paper towel
- Lightly season all over on both sides with Salt & Pepper or BBQ Rub, 30 minutes before cooking
- Place on the BBQ/Grill skin side down
- Turning regularly to prevent burning
- Cooking time: 45 minutes approx
- Cooking temperature: 230°c
- Important Information: Please ensure that the meat juice run clear & it has an internal temperature of over 75°c in the thickest parts of the breasts & legs.
Pro Tip:
Rest your Chicken on a wooden board for 15 minutes before serving. It finishes cooking & comes up to temperature, the meat becomes more tender & juicier as it relaxes & absorbs its natural juices back into the meat.
The meat from the Chicken can be used in many different ways, most people serve the individual sections as a main meal with salad, potatoes pasta etc. When these are grilled on the Barbecue & it has that delicious Smokey flavour; the possibilities are even more appetising.
