So, what is in your Christmas Beef Box?
The 2 Bone Carvery Rib or Beef Rib Roast on the bone is the main attraction in the Christmas Beef Box. This is from our Hereford / Angus Irish Grass Fed cattle with their unique flavour different to that of grain fed beef. The Carvery Beef Rib is approximately 3 Kilos & has 2 finger bones that give the beef extra flavour when cooked on the bone. The “Fat Cap” has been left on the outside of the main eye of the meat to keep the whole piece moist & at the same time, adding extra flavour.
The Fore Rib bones have been “Chined” to remove the back bones, making this a “Beef Carvery Rib”. Separating the rib or finger bones makes this much easier to handle & cook at home.
What does “Chined” mean? When you Chine a piece of meat, you remove the back bones leaving the finger bones from the rib cage. Yo will find that Lamb Racks, Pork Racks & Beef Rib Roasts are the most popular pieces to be butchered like this.
You can carve this Beef Rib Roast on or off the bone (these can be easily removed after cooking), use a large sharp knife to cut slices to your preferred thickness. The best way to carve the Beef rib Roast is to lay it fat side down & carve across the grain, making thinly sliced steaks. When to carve your Beef Rib Roast; all meat is best served after resting on a wooden board covered over.
This Beef Carvery Rib Roast would be best carved after resting for 30 minutes because it allows the meat to finish cooking & to relax becoming more tender, plus absorbing its natural juices back into the meat. These guidelines will give you great results for your Christmas Dinner. Please see how to cook your Christmas Beef Rib RoastÂ
In your Christmas Beef Box the second roasting joint is a luxury Smoked Horseshoe Gammon Joint. Tasty slices of Smokey flavoured Gammon with your roast beef, potatoes, Honey Roasted Parsnips, sprouts…. sounds absolutely delicious, right?
This Smoked Horseshoe Gammon is approximately 2 kilos, boneless, skin on, cured & smoked. The Horseshoe Gammon is netted to keep the piece together when vacuum sealing in the clear recyclable pouch. To prepare before roasting, simply score in 2 opposite directions with a sharp knife to give “Diamond shaped” markings across the back to allow your added Honey or favourite glaze to penetrate the meat.
This Smoked Horseshoe gammon is vacuum sealed for freshness & gives 8-10 good portions. Click this link to see how to cook & roast your Gammon.Â
Christmas Dinner at home would usually have some sort of delicious stuffing to accompany the other cuts of meat. Your Christmas Beef Box has included, a 500-grams vacuumed pack of our Traditional Pork Sausage Meat. The Sausage Meat is made from finest shoulder of Pork cuts, trimmed to ensure that NO GRSTLE is inside. The texture is smooth & meaty, this sausage meat makes great stuffing & sausage rolls in pastry / Dry Cured Bacon.
Dry Cured Smoked Back Bacon has a better, more intense flavour & certainly doesn’t shrink when cooking, like standard “Wet Bacon” bought from the supermarket or butchers. Christmas Dinner without Bacon is like having Christmas Tree Lights… without the tree!? Dry Cured Bacon is much better value for money because you are not paying for all the water like normal wet bacon, you only pay for the meat.
The 2 x 450-gram packs of Back Bacon included are vacuum sealed & frozen from fresh because it preserves the flavour & gives it a very long shelf life when stored at -18°c. Enjoy cooking up some bacon on Boxing Day morning for a Full English Breakfast, epic bacon Sandwiches, sausage, bacon & egg muffins or a great tasting BLT for brunch.
The Christmas Beef Box is not just for Christmas Dinner, it is having food for the whole festive period. Breakfast over the Christmas Holidays is something you can indulge in, & this is why we have added the Black Pepper & Sea Salt Breakfast Sausages. There are 6 x 115-grams (690-grams) patties per pack, vacuum sealed from fresh. Made, like all our Pork Sausages, from finest Pork Shoulder cuts for a better texture & flavour.
These are a great tasting Pork Burger & perfect to make Sausage, Bacon & Egg Muffins, enjoy these with a fresh made cappuccino.Â
The choice of Sausages we have selected for your Christmas Beef Box are the Cumberland Pork Sausages. A traditional Pork Sausage that has a more interesting flavour than the plain pork, great wrapped in Dry Cured Bacon, or a Toasted Sausage Sandwich. Made using the usual trimmed Pork Shoulder cuts to get a smooth, meaty texture without any lumps. These 75-gram sausages are packed in 6’s, with 450-grams per vacuum sealed pack.
Try these in Bangers & Mash, or a special sandwich with a little English mustard, they are delicious in simple comfort food dishes like this.
All of our meat cuts for our Meat Boxes are made in temperature controlled, “Clean” environments. The lower temperatures prevent the loss of moisture in the meat cuts, it also slows the rate of natural bacteria found in food. The very clean conditions ensure we make the most natural tasting, safe products before vacuum sealing into clear recyclable pouches.
All production facilities are BRCGS Approved & operate under internationally recognised health & hygiene standards. The process from Farm to Fork has the welfare of the animals as priority & using less energy, creating less waste to protect the environment. The efficiency of production helps to enable us to give more meat for your money by reducing our production costs.
We support local farmers using sustainable local herds from trusted sources, where the volume & quality gives a great selection of meat to make great products from. As the farms are local, the impact on the environment is less because we have lower emissions from vehicles travelling shorter distances.
The packing of all our meats has to be completed within a few minutes because we don’t want them to dry out. Many of our meat cuts are vacuum sealed into clear recyclable pouches that gently hold the meat in shape, but more importantly keep the natural moisture in the meat. Some of our meat cuts are placed into recyclable sealed trays or shaped trays as they would lose their shape.
We are always looking to find other methods of packaging that is cheaper & more Eco-friendly, so we can then help improve the environment moving towards a greener future. We are now using a thinner, stronger packaging that is also recyclable which helps us to reduce our carbon foot print by using less plastic.
We ask all our online & wholesale customers to please recycle as much packaging as possible from your Christmas Beef Box. As a consumer, you are the most important part of the recycling chain because without you placing the packing into the recycle bins, there would be no recycling.
Enjoy making your Christmas cooks just that bit more special with the cuts we have selected for you in your Christmas Beef Box. Look forward to thick, moist slices of Grass Fed Rib Roast, delicious Dry Cured Bacon wrapped around your Cumberland Pork Sausages, Sliced Smokey Gammon covered in rich gravy. All this & more is great to share with family & friends at home over the Christmas Holidays.
