The Turkey is a large bird with big wings & stronger muscles than the Chicken, this makes the meat more fibrous, succulent & have a better flavour. Boneless Turkey Breast Meat should be pale Pink in colour, with no discoloration or bruising & go almost white when cooked. No water is pumped into the breast to increase weight & profit for your Turkey, it is 100% meat & has the best flavour because of this.
What is a Turkey Breast?
The Turkey Breast is the whole of the chest area with skin on & Boneless.
The Boneless Turkey Breast is similar to that of Chicken; it is a lean meat that has a consistent texture that is more fibrous than Chicken Fillets. Your Turkey is completely boneless, fully trimmed & prepared with only the skin remaining. These are a 2 whole muscles joined at the top without any gristle throughout the main part of the meat.
How are Turkey Breasts cut?
The Turkey Breasts are removed from the main Breast bone as a single whole piece.
The whole Turkey on the bone has the Legs “Oyster Cut” from the carcass, the Turkey Wings are then removed carefully through the first joint. The Breast Meat is the last part to be removed from the carcass. The expert butchers carefully start at the top & pull the meat from the bone (this reduces cutting into the meat) & cutting down the centre gristle to leave both muscles joined in the centre. When the Turkey Breast is laid out after cutting this is referred to as “Butterflied”; hence Boneless Turkey Breasts are also called Turkey Butterflies.
The Breasts are checked for any bruising & unwanted feathers, the slim gristle is trimmed to a minimum before packing. The Boneless Breasts are perfect for rolling & stuffing, or just simply roasting, they give consistent slices of Boneless Meat.
How are Boneless Turkey Breasts packed?
The Boneless Breasts are single packed in Freezer Friendly Recyclable pouches.
The Turkey Breasts are cut & prepared fresh by expert butchers with the internal temperature of the meat only a few degrees above freezing. Once the Breasts are cut, they are placed immediately into a Recyclable Clear Pouch & then vacuum sealed. The Vacuum process removes all the air from the pack & sucks the natural moisture back into the meat. The Breasts are labelled with Farm to Fork traceability, placed into reusable plastic crates & “Blast Frozen” to -25°c.
All production plants & slaughterhouses that produce our meats or products are BRCGS / IFS approved . All the air is filtered & refrigerated in the production rooms, the butchers & packing staff wear fully protective clothing, these precautions reduce natural bacteria. Operated with the highest hygiene & temperature controls to ensure you enjoy the same natural taste & texture from all our meats.
The packaging protects the Turkey Breasts when handling during its delivery to the customer, from freezer burn when stored at -18°c, contamination in your fridge from other foodstuffs. The packaging holds all the natural juices inside the Turkey Breasts when defrosting slowly (in the fridge) & when bringing them up to room temperature before cooking.
We use stronger & thinner recyclable Plastic Pouches when we pack our meats, reducing our “Carbon Footprint”, we use 30% less plastic than previous packaging.
