These are the 3 part section of the whole Wing attached to the Breast bone.
Sherwood Turkey Wings are only made up of the first 2 sections because they have the most meat & it gives better value for money.
Whole Turkey Wings are made up of 3 parts; the Drum, the Flat & the Tip. The first 2 sections are meaty with the Tip section being mostly bone (they are lovely to eat when crispy). The meat on the Wings is succulent & light in colour with a fine texture because Turkeys are a flightless bird & don’t use the wing muscles often. The taste of the Turkey Meat is more flavoursome than Chicken, finding more diverse applications for this than Chicken.
The 3 Sections of a Whole Turkey Wing:
- Section 1; Drum piece (first part) attached to the Breast.
- Section 2; Flat piece (middle part) attached between the Drum & the Tip.
- Section 3; Tip piece (end part) attached to the Flat section.
How do we cut Turkey Wings?
The Turkey Wings are cut from the 3 joint Whole Wings using only the first 2 sections.
Before any cutting of the Wings commences, the Whole Turkey has to be chilled down to below 3°c. The very low temperature reduces growth of natural bacteria & helps keep the natural juices in the meat.
The first part of cutting the Wings is to carefully cut through the first joint between the Wing & the Breast, this has to be done without leaving any cartilage behind on then Wing. The Wings are then checked for any remaining feathers to leave the skin completely naked. Once clean, the Wings have the “Wing Tip” removed cutting through the end joint. The Turkey Wings are now a Meaty 2 Joint piece made up of the Drum & Flat Sections.
How do we pack Turkey Wings?
The Wings are packed frozen loose in Recyclable Freezer Friendly bags.
The Turkey Wings are cut fresh, placed into trays & “Blast Frozen” to -25°c. Once frozen, they are they packed into our Freezer Friendly Recyclable Bags, sealed & labeled with full farm to fork traceability. These wings are fresh frozen to keep all the natural juices inside the meat for a better flavour & texture. The combination of speed & low temperatures of the cutting & packing process, gives a 24 month frozen shelf life & they taste as if they have just been made.
All production plants & slaughterhouses that produce our meats or products are BRCGS / IFS approved . All the air is filtered & refrigerated in the production rooms, the butchers & packing staff wear fully protective clothing, these precautions reduce natural bacteria. Operated with the highest hygiene & temperature controls to ensure you enjoy the same taste & texture from all our meats.
The packaging protects the Turkey Wings during its delivery to the door, from freezer burn when stored at -18°c, contamination in your fridge from other foodstuffs. The packaging holds all the natural juices inside the Wing meat when defrosting slowly (in the fridge) & when bring them up to room temperature before cooking.

Regular feeding programs & space to move around gives them exercise enough to keep a healthier bird. The Turkeys are professionally bread to produce Grade A birds that have large breasts, & are not stressed to produce tender meat with no bruising.
All our Turkey comes from local farms close to the production plants, we use Poland & Italy for our supplies. The trusted sources supply us with mainly Female Turkey for most of our cuts. The specialist production facilities use sustainable sources of Turkeys from farmers with long term relationships.
