Parallel cut from ribs 2-7 to ensure that each individual rib has a similar amount of meat on it. These are cut from between the Brisket & the Chuck Steak, where there is a good marbled meat layer.
The meat quality of these are not the same as some two-layer offerings found on the internet cut from the flanks. The reason for this is the selection & the fact they are single layer from higher up the rib cage next to the brisket. The meat is more like the “Point End of Brisket”, with a better texture.

The pouches or bags we use for our vacuum packing are now generally stronger, thinner because this means less volume of plastic needed.

All our production facilities are BRCGS Approved & operate under these guidelines ensuring safe Restaurant Quality meat cuts. The production staff & butchers are all health checked before putting on their fully protective clothing to go into the cutting & packing rooms.
