This great flavoured Black Pudding has the smooth texture as the White Pudding because of the way that we ensure we use only the best pork cuts that are properly trimmed before being minced. Once minced the other ingredients are then blended into the fresh Pork Mince before running all the mixture through for a final time.
The White Pudding is then filled into a natural casing making large long-familiar rings, these are then left to set up overnight to make sure the ingredients mix with the meat. They are then cooked thoroughly in clean filtered water until they become firm to touch, & then set into the chillers to cool down. After this, we cut into sections of 150-grams & pack 2 into a vacuum-sealed clear recyclable pouch.
Having a balanced diet is very important & quality pork is a great source of vitamins, minerals & protein. Using the lean pork shoulder is best because it has the richest source of all these. There are many breeds of pigs in the world, each with different characteristics, some large fatty ones, to small very lean types. Our choice of pig is the Pietrain Pig because it is a low cholesterol breed that has fantastic meat to fat ratio that has excellent flavour with guaranteed results in the kitchen.
Having access to a large volume of a good grade, perfect sized pork sides to choose from on a daily basis enables us to create the consistent “Restaurant Quality” pork cuts that people have come to expect from the Sherwood brand. We have daily delivery of pigs to the production facilities from long-standing local countryside farms in Belgium & Northern France.
Our select breed of pigs gets the name Pietrain from the small village of “Pietrain” in the Wallonia region of Belgium where they mainly originated from.
