The method & meat cuts used to make the Bratwurst is like our other Traditional or Cumberland Sausages. These are a NO GRISTLE meaty Sausage that has a perfect snap with their natural skins. Bratwurst Sausages have long been a favourite sausage to have in a bun with freshly fried onions, mild mustard or ketchup at the German Beer Festivals that are now so popular. Our thick Porky Bratwursts have a traditional German Recipe & are now 20% larger than our previous ones. We only use the best cuts of Pork to create our Meaty Bratwurst Sausages for the best texture & flavour. We have these packed in 600gram sealed pouches, ideal for the freezer & a great size for home cooking.
In our sausages you can taste the flavour of the lean Pork Shoulder unlike many types of Bratwurst that are so fat to maximise profit. When you serve our delicious Bratwurst Sausage, you want it to be enjoyed by all the family, especially the children who love a good Bratwurst Sausage or Hot Dog roll dipped in their favourite sauce!

An inexpensive sausage that can be used in many different dishes, ideal for quick midweek meals to fit in with a busy lifestyle, or that mid-afternoon sausage sandwich on a Saturday.
What are Bratwurst Sausages?
Bratwurst Sausages are a German styled meaty sausage that’s usually are made from Minced Pork (can include veal) with mild spices blended into the meat.
Our Bratwursts contain only Pork & German Seasoning that are approximately just under the thickness of 2 thumbs & 7 inches in length. They have an even texture throughout that are firm to bite & easy to chew.
How do we make Bratwurst Sausages?
Bratwurst Sausages are made with minced Pork blended with a German seasoning recipe in natural sausage skins.
To make any good sausages you need the best meat cuts & a great seasoning. Our expert butchers use only preferred cuts of Shoulder Pork combined with a Traditional German Bratwurst Seasoning. The Pork cuts are trimmed & degristled to remove any bone or cartilage fragments, then chilled down to just above freezing temperature, this helps the meat grind better & reduces natural bacteria growth. The Pork cuts are placed into a chopping bowl to cut into smaller chunks before being minced through a coarse grinding plate.
The lean Pork Shoulder we use in our Bratwurst Sausage ensures there is no gristle going into the mix when making them. The results are a better textured sausage with no surprise lumps to takeaway from the delicious flavour. The Pork Shoulder has the best flavour because of the fibrous nature of the muscles, which makes the sausages stand out from a common cheap branded product.
The second stage is to mix the German Seasoning Recipe (with a little added water to help) into the minced meat by hand to start the blending process, this mix is then ground through a second time on a coarse plate to get the final texture & blend thoroughly. Much improved results are gained with this method to create our Bratwurst Sausages or any sausage we make.
Next the Meat & Seasoning Mix is pushed into the Sausage Filling Machine & Natural Sausage Skins are filled into long lengths before linking by hand into the familiar 7 inch Sausages. The Bratwurst Sausages are left in the chillers overnight at just above freezing temperature allowing the meat to absorb the flavour of the seasoning.
How do we pack our Bratwurst Sausages?
Sherwood Bratwurst Sausages are placed in Recyclable Plastic Pouches 4 per pack.
To pack our Bratwursts, we do this early in the morning because they have been hanging overnight to “Set Up” (let the meat infuse with the seasoning) & are now ready to be packed & labelled. The Bratwursts are placed 4 per pouch, these are Vacuum Sealed & labelled with full Farm to Fork traceability. The Bratwursts are placed into reusable crates, placed on pallets & Blast frozen to -25°c. The Blast Freezing process gives the sausages a 24 month frozen shelf life.

The minimal handling & speed that we make the sausages gives the best flavour & texture whilst producing a safe product that has a more natural flavour & texture you want. The packaging prevents the Bratwurst Sausages from getting freezer burn or contamination from other foods when kept chilled in the fridge at home. The bags preserve the natural meat juices so the Sausages retain all their flavour & moisture when cooking. The bags also stop the Bratwursts from drying out when bringing up to room temperature before cooking.
The size of the pack is just right for smaller numbers of people & perfect when you wish to make larger meals by using multiple packs that usually portion out exactly in many recipes. We source all our pork locally to our production facilities to reduce our “Carbon Footprint” with lower vehicle emissions & less journey times, reducing stress levels for the pigs. Sourcing our Pork locally from Northern France & Belgium ensures we have a sustainable supply of high quality Pork from good welfare farms. Having top grade pork allows us to make “Restaurant Quality” Pork cuts in larger volumes to supply homes & restaurants across the UK & Europe.
Our choice of preferred Pig breed is “Pietrain Pig”, this is found mainly in the Wallonia region of Western Belgium.
These are a Pig with a good meat yield, low in cholesterol, good muscle structure & a mild temperament. Our Pork has a good flavour & texture, combined with modern day slaughtering techniques are designed to be as humane as possible, ensuring light coloured, soft meat.
How do you cook Bratwurst Sausages?
These should be traditionally boiled then grilled; on the Barbecue adds a whole new level of flavour!
Try cooking these in Beer, it gets into the meat & makes these so delicious. You can serve these with sauerkraut, potato salad & mustard on the side. Most of our customers buy these to place in long buns & serve them like Hot Dogs.
How to prepare Bratwurst Sausages before cooking;
- Place frozen Bratwursts in fridge to thaw naturally at a lower temperature.
- Remove from the fridge (keep in packaging) & leave in ambient temperature for 20 minutes before cooking.
- Remove from packaging & pat dry with paper towel.
How to cook your Bratwurst Sausages;
In the Pot;
- Fill the pot with water & bring to the boil.
- Turn down the heat & let the water simmer.
- Place the Bratwurst Sausages slowly into the water.
- Let the Bratwurst simmer for approx 15mins or until an internal temp of 75°c has been reached.
- Remove the Bratwursts from the water & let drain.
- These can be finished on the grill to brown the outside Smoke these on the BBQ for next level flavour profile.
In the Air Fryer;
- Set Air Fryer temperature to 190°c.
- Spray a light coating of vegetable oil into the basket.
- Place the Hot Link Sausages evenly spaced into the basket.
- Cook for 7-8 minutes turning them half way through & check for internal doneness (75°c).
- Always ensure the Bratwursts are thoroughly cooked inside.
On the Barbecue;
- Place the Bratwurst’s on the grill over direct heat for Hot & Fast, indirect heat for a longer cook for a more Smokey flavour.
- Cook for a few minutes each side (direct heat) checking they do not burn
- Cook for 10 minutes each side at a lower heat (indirect heat) finish over direct heat to Brown them off.
- Always ensure the Bratwurst’s are thoroughly cooked inside.
