The Sherwood Breakfast Sausages are great for making the familiar “sausage and egg muffin”, along with a light lunchtime snack or a tasty quick midweek meal for the children. The way we select our meat & other ingredients to make these is very important to creating a pork burger that is lump free & tasty every time. The Black Pepper & Sea Salt give these a different taste than our Pork & Apple flavoured ones, every bit as delicious but not too overpowering with the pepper.
The high meat content of our Breakfast Sausages is a great source of vitamins, minerals & protein, this is important for a balanced diet. The way we grind the sausage meat & blend the ingredients makes them an easy to digest meal that is not to heavy but gives improved slow release energy levels. All our breakfast sausages are produced & packed within minutes to ensure they are as fresh as possible.
What’s in our Pork Burgers, Breakfast Sausages ?
Lean Pork Shoulder meat with some added pure white back fat removed from the Sirloin of Pork. Here are a couple of videos showing where this meat comes from on the pig.
Sherwood Breakfast Sausages are made using only the lean shoulder meat because this has better texture to help when grinding (mincing) the meat. The coarse texture has the best flavour in the whole pig & absorbs the seasonings very well to really make the flavour stand out. We add some pure back fat that is cut from the back of the Pork Sirloin as this mixes perfectly with the shoulder meat to create the right consistency.
Once the initial mix has been done, the seasonings & the rusk is added with a little water to help this all blend with the meat until the Sausage Meat is thoroughly mixed. The temperature of the mix is only a few °c above freezing before being weighed into 4oz portions ready to be vacuum sealed to keep their flavour locked in. The Breakfast Sausages are set into the chillers overnight to set up & let the meat absorb the seasonings, then they are blast frozen to -18°c, keeping them in perfect condition.
The clear pouch that we place the Breakfast Burgers into is fully recyclable, is now stronger & thinner to reduce the amount of plastic we use annually. The combination of less plastic & placing 5 patties per pack, helps to reduce our Carbon Footprint as part of our Greener policy. With all our customers recycling responsibly, this is part of the process to ensure that we don’t increase our Carbon output.
We use select national couriers to deliver our meat boxes to homes across the country next day, these couriers are very efficient & have lower carbon emission per parcel delivered than regular shopping trips to shops or supermarkets. Buying your meat online & having it delivered to your door is more eco friendly than queueing in traffic to get out to collect your shopping.

All our sausage production is done in temperature controlled, hygienic cutting rooms that are monitored daily so that we may be able to produce consistently safe foods that are tasty. The packaging will protect the patties from freezer burn whilst locking in all the natural flavours.
All our production facilities are BRCGS Approved & we are always using local herds to have continued sustainable, quality supplies of pork that is readily accessible.
There are many breeds of pigs in the world, each with different characteristics, some large fatty ones, to small very lean types. The Pietrain Pig is a low cholesterol breed that has a fantastic meat to fat ratio. Our daily supply of pigs is from local countryside farms in Belgium & Northern France. The name of the pigs originates from the village of “Pietrain” in the Wallonia region of Belgium.
