Created from quality Pork cuts combined with a simple seasoning, essentially skinless flat sausages that are quick & easy to cook.
How do we make Breakfast Sausages?
To create our own Breakfast Sausages we first select the meat; we only use best Pork Shoulder Cuts because these have the coarse fibres & best flavour. We then choose the fat (for added flavour & helping blend the mix) from the back of the loin because this is a consistent pure fat that has no gristle. The seasoning of choice is a Traditional Simple Recipe of Black Pepper & Sea Salt that brings out the flavour of the Pork cuts.
Lean Pork Shoulder meat with some added pure white back fat removed from the Sirloin of Pork. Here is a video showing where this meat comes from on the pig.
All the pork & fat cuts are chilled to only 2-3°c before cutting or mincing. The low temperatures reduces the loss of natural moisture from the meat & lowers any bacteria growth. This is important to make safer, more flavoursome sausage patties before packing.
The Pork Shoulder muscles are trimmed & de-gristled before placing into the mixer, a percentage of the pure Pork Back Fat is added next & then this is all minced (ground) up. The minced Pork & Fat is placed into the mixer a second time where the seasonings are added. The meat & seasonings are then blended until the correct consistency is achieved. The blend of meat & seasonings are then minced for a second time, the mix is ready for portioning.
A Breakfast Sausage is approx 113g; our expert butchers weigh 113g portions of the seasoned Sausage Mix & these are pressed into 8 cm diameter round patties.
How are our Pork Breakfast Sausages packed?
We pack our Breakfast Sausages 3 pieces per pack.
We pack our Breakfast Sausages by hand immediately after they are formed into the round Pork Burgers / Patties. They are placed onto clear recyclable plastic trays, then vacuum sealed, keeping all the natural flavour & moisture in the sausage meat. The freshly packed Breakfast Sausages are then labelled & boxed up, placed onto pallets & placed into the chillers overnight to “Set Up”.Â
Leaving the Breakfast Sausages overnight to Set Up gives the seasonings time to infuse with the meat, creating a more even flavour throughout the Sausage. The Sausages are then placed into a blast freezer & frozen to -25°c to keep them in perfect condition. The main benefit of freezing meat very quickly is to keep the meat perfectly preserved as if it had just been made.
The meat keeps its texture & flavour for 2 years when stored at -18°c; great when you can keep these at home to use whenever you want a quick tasty meal.

How do you cook Breakfast Sausages?
You can cook Breakfast Sausages in the Pan, an Air Fryer or on the Barbecue in just a few minutes. The ready made Pork Breakfast Burgers / Sausages are a quick simple solution for a delicious meal. IMPORTANT; please ensure that the meat juices run clear or the internal temperature of the meat is a minimum of 75°c before serving.
How to prepare Breakfast Sausages before cooking;
- Place frozen Breakfast Sausages in chiller to thaw slowly.
- Remove from chiller (keep in packaging) & leave in ambient temperature for 1 hour before cooking.
- Remove from packaging & pat dry with paper towel.
- Using your thumb; make an indentation in the middle of the patty to prevent it rising in the middle when cooking.
How to cook your Breakfast Sausages;
In the Pan or Skillet;
- Heat the pan over a medium heat.
- Drizzle a small amount of Olive Oil in the pan.
- Place the Breakfast Sausage gently away from you into the pan (helps prevent any oil spitting towards you).
- Cook for a few minutes each side until they turn white inside, the juices run clear or internal temp of 75°c has been reached.
In the Air Fryer;
- Set Air Fryer temperature to 190°c.
- Spray a light coating of vegetable oil into the basket.
- Place the Breakfast Sausages evenly spaced into the basket.
- Cook for 7-8 minutes, you may wish to turn the patties half way through & check for internal doneness.
