This traditional recipe combined with the lean Gristle Free pork shoulder cuts, make a great tasting sausage that is perfect every time. The flavour of these sausages is mild & can be enjoyed by the whole family for breakfasts, sandwiches, casseroles etc. The 75-gram Cumberland Pork Sausages are vacuum sealed 6 per pack (450g), this ensures they have the perfect taste when opened after keeping in your freezer. Traditional Cumberland Pork Sausages:

The Cumberland seasoning added to the sausages is a simple mild seasoning that really brings out the flavour of the lean pork. The recipe used for our sausages has not changed for many years making them very popular with our online customers. Cumberland Pork Sausages originate from the Cumbria region in the UK, & were a ring style sausage, we have made them as a more familiar straight thick sausage.

Cumbria is an area of outstanding natural beauty including the Lake District & has been made famous by such people as the poet William Wordsworth & Donald Campbell in the water speed records on Coniston Water, where he sadly lost his life in a crash in his record breaking boat, the Bluebird.

In production our expert butchers make the Cumberland Pork Sausages using lean shoulder meat & white loin fat because the coarse shoulder meat combined with the fat will give a perfect balance to make a consistent textured sausage. The shoulder meat has the best flavoured muscles because of the fibrous texture & delivers this every time. The added smooth fat has no lumps or gristle in it, adding to the flavour of the meat & keep it moist during cooking.

Once the meat has been combined with the fat, we then add the Cumberland seasoning into the mix, with a little added rusk & water to help it blend. Once the mix has blended to the right consistency, we then, using only natural skins, make the long familiar sausage tubes before “linking” this into 77 grams, 12 cm long juicy thick Cumberland Pork sausages.

This method of making our sausages is used for our Traditional Pork Sausages & our Boerewors Sausages.

Once our sausages have been made, they are then hung overnight in a very cold chiller to let them “set up”. This means that the seasoning has a chance to infuse the meat enhancing the flavour. Our 6 pack sausages are packed & sealed within minutes of removal from the chiller before freezing down to ensure we deliver the best natural flavoured sausage to your door.

We only use natural skins for our Cumberland Pork Sausages because it gives that perfect snap & bite for “the perfect sausage experience”.

There are many different types of sausage available, some great & some that are a cheap commercial variety. As we can make our sausages on a large scale we can produce to a high consistent standard & offer great value. The selection of the lean pork shoulder meat is vital to the quality of our sausages & is something we will not compromise on, because it is false economy & will lower the quality of our sausages.

When you cut into one of our Cumberland Pork Sausages, the difference from an ordinary commercial sausage is immediately apparent; there is more true quality meat, no lumps & the aroma from the sausage is delicious. Just as a sausage should be!

Great quality pork is an excellent source of vitamins, minerals & protein, as we only use lean shoulder meat to make our sausages, they are nutritious & tasty. An affordable good sausage does not need to be plain, tasteless or fatty in nature. They are something that you will have often at home for simple comfort food dishes, & can be found in many good recipes.

The packaging used for our sausages is fully recyclable & through our customers recycling responsibly at home, we aim to reduce our carbon foot print as much as possible. We are always looking for improved recyclability in our packaging, but product safety is first! The standards in place for producing our Cumberland Pork Sausages means that we can deliver a safe tasty product with guaranteed results.

The production of our Cumberland Pork Sausages are made under the strict conditions of BRC Approval, this means that we have health officials that constantly monitor the production to ensure all rules are adhered to at all times. The temperatures of the production rooms are kept at a few degrees above freezing because this reduces the growth of any natural bacteria & prevents the meats from losing further natural moisture & flavour.

We have carefully selected the pork we use in our Cumberland Pork Sausages because it allows us to create tasty, consistent sausages & meat cuts. Our supply of high quality pork comes from local herds as this is easier to maintain a sustainable supply chain of better pigs. The farmers have long standing relationships with producers & understand the need for quality in production. The closeness of the farms helps to reduce travel times, lowering stress levels for the pigs & reducing vehicle emissions to help our Carbon Footprint.

There are many breeds of pigs in the world, each with different characteristics, some large fatty ones, to small very lean types. Our choice of pig is the Pietrain Pig because it is a low cholesterol breed that has a fantastic meat to fat ratio that has excellent flavour with guaranteed results in the kitchen.

Having access to a large volume of good grade, perfect sized pork sides to choose from on a daily basis enables us to create the consistent “Restaurant Quality” pork cuts that people have come to expect from the Sherwood brand. We have daily delivery of pigs to the production facilities from long standing local countryside farms in Belgium & Northern France.

Our select breed of pigs gets the name Pietrain from the small village of “Pietrain” in the Wallonia region of Belgium where they mainly originated from.
