Cumberland Pork Sausages originate from the Cumbria region in the UK, & were originally a ring style sausage, we have made them as a more familiar straight thick sausage.

In production our expert butchers make the Cumberland Pork Sausages using lean shoulder meat & white loin fat because the coarse shoulder meat combined with the fat will give a perfect balance to make a consistent textured sausage. The shoulder meat has the best flavoured muscles because of the fibrous texture & delivers this every time. The added smooth fat has no lumps or gristle in it, adding to the flavour of the meat & keep it moist during cooking.
How do we make our Cumberland Pork Sausages?
Once the meat has had the small amount of fat added, this is then minced to a coarse size. The Cumberland seasoning is then added to the mix, with a little rusk & water helping the mix to blend into the right consistency. Using only natural skins, we fill the long familiar sausage tubes before “linking” this into 75 grams, 12 cm long juicy thick Cumberland Pork sausages.
Once our sausages have been made, they are then hung overnight in a very cold chiller to let them “set up”. This means that the seasoning has a chance to infuse the meat enhancing the flavour. Our 6 pack sausages are packed & sealed within minutes of removal from the chiller before freezing down to ensure we deliver the best natural flavoured sausage to your door.
This method of making our sausages is used for our Traditional Pork Sausages & our Boerewors Sausages.
