These are cut from the Best End of the Loin & French Trimmed.
The rib bones are sawn through very carefully so as not to tear into the main eye of the meat, this process is called “Chinning” the meat. The remaining finger bones are trimmed or “Frenched” with all excess meat removed from them at the top, leaving approximately 3 cm exposed just the same as a French Trimmed Rack of Lamb.
The Rind (Skin) has been left on the piece so you can score this before cooking to create crunchy brown Crackling. Scoring the meat with seasonings or just simple Salt allows it to penetrate into the meat enhancing the flavour.
