Sherwood Pig Wings are small delicious hind quarter shanks of pork that are similar to lamb shanks. These are approximately 225 grams each with only a single bone through the middle, surrounded by succulent meat that will fall off the bone when cooked. We cut & pack the meat within a few minutes to minimise exposure whilst unwrapped to stop it from drying out & any natural airborne bacteria from spoiling it, keeping the product as fresh as possible before freezing. Keeping the meat very cold is a vital part of the process because it helps the meat retain its natural juices, keeping it moist during cooking & any natural bacteria won’t grow under these temperatures making a safer product.
All our meat production is carried out in very hygienic, temperature controlled cutting rooms, with standards in place to maintain a high level of safety & quality products. These facilities have to be accredited & monitored daily but certified members health veterinarians who check to make sure that the standards are met.
The Pig Wings are vacuum sealed into clear recyclable pouches that will gently hold the shape of the meat & protect the meat during the freezing process, when being delivered to your door & when you have them at home in your fridge, from other products that could taint the meat. The vacuum process will suck any juices back into the meat keeping it very moist & improving the flavour, especially when ageing the meat.
The cutting, packing process combined with the packaging will give a much longer shelf life to the Pig Wings. The clear packaging stops the wings from drying out when bringing up to room temperature.

Our select breed of pigs gets the name Pietrain from the small village of “Pietrain” in the Wallonia region of Belgium where they mainly originated from.
