Sherwood Pork and Leek Sausages are an old fashioned English sausage that has been a traditional family favourite for generations.

Created from our finest pork with added Leek & seasoning to make a delicious Gristle Free generous sausage that is perfect for home cooked meals. The flavour of these is not overpowering & goes really well with rich gravy & mashed potato to make your meal more interesting. These are sized traditionally with 6 per LB or 450-grams, giving great value for money in our handy sized packs.

We only create proper butcher style sausages that have the great taste & perfect bite!

Chefs Choice Meaty Pork and Leek Sausages:

As with all our sausages, our in house expert butchers only use the meat from the shoulder of pork. The muscles are trimmed of the excess fat & any gristle to ensure that the texture is perfect for every bite! The best flavour is found in the shoulder meat because the meat is more fibrous as it is a hard working group of muscles. The meat gives a great texture when put through its first grind in the mincer & mixes really well when adding a little pure white fat from the loins to increase the flavour.

Once the two have been mixed & ground together the next stage in the process is to add the final seasonings, rusk & water. The dried leek seasoning is gradually added as the meat is turned in a large drum or hopper, next the rusk is added in correct amounts, then finally water is added until the mixture is at the correct consistency.

Once all this has been thoroughly mixed, it is then fed through the grinder for its final time, this makes sure the texture & mix are perfectly balanced.

The delicious Pork and Leek Sausages are ready to be finished by placing all this into our natural sausage casings to produce the familiar sausage you see at home. We only use natural casings because the bite has to be right with no chewy skin, a sausage has to “Snap” when broken in half to check that it has been filled correctly.

Once made our Pork and Leek Sausages are placed on hanging racks in very cold chillers over night to “Set Up”.

The seasonings can then work their magic on the rich textured pork shoulder meat & also allows the texture of the sausages to firm up ready for packing. The method used to make our Pork and Leek Sausages is very important because it guarantees perfect results every time. 

Our Pork and Leek Sausages are approx 77-grams, with a nice girth to them, this is how a Traditional English Pork sausage should be. All our sausages are removed from the chillers first thing in the morning & packed in a fully temperature controlled production room. We vacuum seal 6 per pack so they have all the flavours locked into the meat because it sucks all the flavour back into the meat, giving the best results at home.

At Sherwood Foods we are able to offer a competitive price on our quality Pork and Leek sausages because we can buy all our seasonings & the shoulder meat at a wholesale rate, this is something we then pass onto our customers. We will not place inferior or cheaper cuts into our sausages to try & increase profit or to make them cheaper, our customers expect one standard from us… & this is what is given!

Our choice of pig is the Pietrain Pig because it is a low cholesterol breed that has fantastic meat to fat ratio that has excellent flavour with guaranteed results in the kitchen.

Our select breed of pigs gets the name Pietrain from the small village of “Pietrain” in the Wallonia region of Belgium where they mainly originated from.

After our Gluten Free production is complete, other sausages & products that do contain allergens will be made in the same production & using the same equipment.
