As with all our sausages, our in house expert butchers only use the meat from the shoulder of pork. The muscles are trimmed of the excess fat & any gristle to ensure that the texture is perfect for every bite! The best flavour is found in the shoulder meat because the meat is more fibrous as it is a hard working group of muscles. The meat gives a great texture when put through its first grind in the mincer & mixes really well when adding a little pure white fat from the loins to increase the flavour.
Once the two have been mixed & ground together the next stage in the process is to add the final seasonings, rusk & water. The dried leek seasoning is gradually added as the meat is turned in a large drum or hopper, next the rusk is added in correct amounts, then finally water is added until the mixture is at the correct consistency.
Once all this has been thoroughly mixed, it is then fed through the grinder for its final time, this makes sure the texture & mix are perfectly balanced.
The delicious Pork and Leek Sausages are ready to be finished by placing all this into our natural sausage casings to produce the familiar sausage you see at home. We only use natural casings because the bite has to be right with no chewy skin, a sausage has to “Snap” when broken in half to check that it has been filled correctly.
Once made our Pork and Leek Sausages are placed on hanging racks in very cold chillers over night to “Set Up”.
