Sherwood Pork Belly cuts are approximately 1.5 kilos each, we have removed all the skin (rind) & bones to leave a delicious meaty Boneless and Skinless belly of pork. Our expert butchers have selected the bellies from our finest pigs that have excellent meat to fat ratio, to ensure that you have the best product possible. These pork belly pieces & the rind on pork belly we also offer, are the perfect size for home cooking.

Pork Belly Boneless Skinless:

Historically the pork belly has always been an affordable roasting dish & is found on many menus in various recipes. We have created this one for those recipes that require no bone or rind to save you the time & money in preparation & waste.

The way we make these belly pieces are; we take a thick whole belly & remove the piano bones (rib bones) individually, leaving the meaty rib fingers on top, then the pork belly is turned over & the outer rind along with some of the hard fat is removed on a special machine. The fat underneath that remains is a white soft fat that gives the pork belly extra flavour & moisture. As they say “fat is flavour”.

The texture of pork belly is slightly course & has good intramuscular fat running through it that will render down during your cook. The colour of the meat is a light pink, indicating quality young pork that has been well fed & processed properly to get perfect pork. This will give an easy to chew meat that is easily digested, whilst not being overwhelmed by the fat flavour.

Pork belly that is prepared like this is ideal to be cut in different ways; you can slice into thin bacon like rashers for the pan, cut into thick steaks for cooking under the grill, stuff & tie up the whole piece for roasting or place on the BBQ & get the smokey flavour into the piece. These are just a few ways that you can use this pork belly.

Our expert butchers prepare & pack our pork in clean, temperature-controlled cutting rooms to make sure that we produce the freshest, most hygienic meat possible. The low temperatures help to keep the natural bacteria found in meat from reproducing to give the meat its natural taste. We pack all our cuts within a few minutes of production into vacuum-sealed clear recyclable pouches.

The clear pouches protect the meat from becoming freezer burnt & also when being delivered to your door. The vacuum process sucks all the natural moisture of the meat back into it whilst gently holding the shape of the meat. Freezing immediately after this will keep the pork belly in perfect condition until you open at home.

The pouches will protect the pork belly when you are bringing it up to room temperature before your cook because it won’t dry out.

By packing them this way makes them easy to freeze & store. The recyclable clear pouches are one way we can reduce our carbon footprint by our online customers recycling responsibly at home. Reducing our use of plastic to lower our carbon footprint for a greener future is something we are always trying to do.

The process from farm to fork is designed to maximise value for money & minimise waste, with welfare & the environment top of the list. All our production facilities are BRC Approved & we are always using local herds to support local farmers.

We are very selective on our preferred choice of pork because it suits our cuts to give better results in cooking. There are many breeds of pigs in the world, each with different characteristics, some large fatty ones, to small very lean types. Our choice of pig is the Pietrain Pig because it is a low cholesterol breed that has fantastic meat to fat ratio that has excellent flavour with guaranteed results in the kitchen.

Having access to a large volume of a good grade, perfect sized pork sides to choose from on a daily basis enables us to create the consistent “Restaurant Quality” pork cuts that people have come to expect from the Sherwood brand. We have a daily delivery of pigs to the production facilities from long-standing local countryside farms in Belgium & Northern France.

Our select breed of pigs gets their name Pietrain from the small village of “Pietrain” in the Wallonia region of Belgium where they mainly originated from.
