Historically the pork belly has always been a cheaper roasting dish & is found on many menus with some amazing recipes. We have created this one for those recipes that require no bone or rind to save you the time & money in preparation & waste. The Pork Belly joints at 1.5 kilos are a perfect size for most home cooked recipes, we do also offer the Rind on Belly Joints for those that enjoy making Pork Crackling as a special treat.
How are expert butchers make these belly pieces; take a thick whole belly & remove the piano bones (rib bones) individually, leaving the meaty rib fingers on top, then the belly is turned over & the outer rind along with some of the hard fat is removed on a special machine. The fat underneath that remains is a white soft fat that gives the pork belly extra flavour & moisture. As they say “fat is flavour”.
The texture of pork belly is slightly course & has good intramuscular fat running through it that will render down during your cook. The colour of the meat is a light pink, indicating quality young pork that has been well fed & processed properly to get perfect pork. This will give an easy to chew meat that is easily digested, whilst not being overwhelmed by the fat flavour.
Pork belly that is prepared like this is ideal to be used in different ways; you can slice into thin bacon like rashers for the pan, cut into thick steaks for cooking under the grill, stuff & tie up the whole piece for roasting or place on the Barbecue & get the Smokey flavour into the piece. The vacuum process sucks all the natural moisture of the meat back into it whilst gently holding the shape of the meat. Freezing immediately after this will keep the pork belly in perfect condition until you open at home.
The pouches will protect the pork belly when you are bringing it up to room temperature before your cook because it won’t dry out.

We have a daily delivery of pigs to the production facilities from long-standing local countryside farms in Belgium & Northern France.
Our select breed of pigs gets their name Pietrain from the small village of “Pietrain” in the Wallonia region of Belgium where they mainly originated from.
