This Boston Butt Half piece is crafted from used the select piece from the shoulder, it is a combination of the chuck, feather blade & roller blade, which are the coarser textured cuts perfect for ” low & Slow”. The spine bones have been removed from the lower “Pork Collar” section where the money muscle is, the “Blade Bone” or scapular is left in because it transfers the heat into the middle of the whole piece for a more even cook.
The fat cap has been left covering the top of the blade bone section of the Boston Butt to protect it & render during the cook. The reason the rendering is important is because the fat helps keep the meat moist during the long cook & it also enhances the flavour.
The natural intramuscular fat found in the shoulder of pork helps keep the meat moist during the cook, it also helps when it comes to the final pull when cooking is completed.

The vacuum packing protects the meat from freezer burn or getting contaminated by other foods in your fridge. Leaving your Half Pork Boston Butt in the vacuum bag when removing from the freezer or fridge to bring to room temperature, will prevent it from drying out.
Production facilities are BRCGS Approved ensuring we make the safest meat cuts possible. The butchers & production staff are fully protected in clean head to toe clothing to prevent any cross contamination with the meats. The production rooms are kept at very low temperatures, cleaned during the day & deep cleaned at the end of every day.
The supply of Pigs to production is from local farmers that are long time trusted suppliers with sustainable herds. The selection & volume of the Pork allows us to pick & choose the meat according to the fat to meat ratio required for each individual cut. There are many breeds of pigs in the world, each with different characteristics, some large fatty ones, to small very lean types.
