Our expert butchers have peeled these & removed any excess fat from the outside to leave the pure muscle “nugget” ready to cook at home in the pan / oven or on the BBQ. We recommend cooking these by a quick sear to brown the outside before slow cooking in the oven at around 160 or you can enjoy these on the BBQ with the added smokey flavour.

The texture of the meat is fairly course which is key to all the flavour inside them, the intramuscular fat will render during the cook & keep the meat moist, whilst adding to the taste. The pork cheeks are a great source of vitamins, minerals & protein & are a little darker in colour due to the muscular nature of this piece.

The process from farm to fork is designed to maximise value for money & minimise waste, with welfare & the environment top of the list. All our production facilities are BRC Approved & we are always using local herds to support local farmers.
There are many breeds of pigs in the world, each with different characteristics, some large fatty ones, to small very lean types. Our choice of pig is the Pietrain Pig because it is a low cholesterol breed that has a fantastic meat to fat ratio that has excellent flavour with guaranteed results in the kitchen.
Having access to a large volume of good grade, perfect sized pork sides to choose from on a daily basis enables us to create the consistent “Restaurant Quality” pork cuts that people have come to expect from the Sherwood brand. We have daily delivery of pigs to the production facilities from long standing local countryside farms in Belgium & Northern France.
Our select breed of pigs gets the name Pietrain from the small village of “Pietrain” in the Wallonia region of Belgium where they mainly originated from.
