This cut is mainly found on mainland Europe or as a wholesale pork cut in the UK, now they are being found on more menus in restaurants, & people who buy these also buy our pork cheeks as they are also a very underrated pork cut.
The name Secreto comes from the Spanish meaning “Secret Cut”, this is because it is normally found in more specialised butchers in Spain. The Pork Secreto would normally be harvested from their Iberico Pork that has a higher fat content with a different flavour than our Pietrain pigs, we prefer the lower fat content that our pigs have by comparison & they have enough to give this cut great flavour.
The fibrous texture of the pork Secreto combined with the fat will breakdown to become very easy to bite & digest when cooked. The flavour of the pork is very tasty due to the fibrous nature of the cut, adding simple seasoning will only enhance the delicious flavour. The pieces won’t shrink much when seared on the outside first, & each piece will feed 2 people good-sized portions.
Great meat is an excellent source of essential vitamins, minerals & protein. Our select quality pork is no exception to this, the low cholesterol pigs have very good meat to fat ratio to give just enough fat for flavour, but a high meat content for all the nutrients needed in a good diet for energy & well being.
Once cooked the Pork Secreto will need covered & rested for 10 minutes to allow the meat to relax & absorb the juices on the cutting board before slicing. The best way to get great steaks from these pieces is to select a large sharp knife because you need to make long cutting strokes for the best-looking steaks. Carefully hold the knife at an acute, almost flat angle parallel to the board, cut thin wide slices in a single stroke that will be easy to cut on the plate & present well.
All our pork is cut in temperature controlled clean cutting rooms & is cut, packed & boxed within a few minutes. The low temperatures help to stop moisture loss through the meat being very cold & holding its natural juices longer, it also reduces the growth of natural bacteria to make for a fresher tasting steak. Hygiene is vital to creating meat cuts that have a much longer shelf life.
The Pork Secreto is vacuum packed in clear recyclable pouches to help reduce our carbon foot print & to protect the meat when delivered to your door. The pouches hold the shape of the steak pieces & the vacuum process sucks any moisture into the meat helping keep the flavour & to keep it moist during your cook. The packaging will prevent any freezer burn, any flavours from other food in your fridge tainting the steak pieces & it will prevent any drying out whilst bringing up to room temperature.
We are always looking to find affordable solutions to replace the current recyclable pouches used, we are now using a stronger thinner pouch & placing 2 pieces per pack to reduce emissions. With our customers recycling responsibly, this is making a difference towards a greener future.
The process from farm to fork is designed to maximise value for money & minimise waste, with welfare & the environment top of the list. All our production facilities are BRC Approved & we are always using local herds.
There are many breeds of pigs in the world, each with different characteristics, some large fatty ones, to small very lean types.
