These Pork Shanks are like large Pig Wings with two bones inside not just one. There is a small amount of the rind left on these to help protect the meat from drying out when cooking Low & Slow.

We place the pork shanks into recyclable clear pouches because we vacuum seal them to allow the natural juices to be sucked back into the meat. The pouches also hold the meat in shape & protect it from any other flavours. When bringing meat up to room temperature before cooking, the pouches will prevent it from drying out or from any flying visitors!

Our choice of pig is the Pietrain Pig because it is a low cholesterol breed that has a fantastic meat to fat ratio that has excellent flavour with guaranteed results in the kitchen.
Having access to a large volume of good grade, perfect sized pork sides to choose from on a daily basis enables us to create the consistent “Restaurant Quality” pork cuts that people have come to expect from the Sherwood brand. We have daily delivery of pigs to the production facilities from long-standing local countryside farms in Belgium & Northern France.
Our select breed of pigs gets the name Pietrain from the small village of “Pietrain” in the Wallonia region of Belgium where they mainly originated from.
Our pork shanks are easy to cook in the oven, in the pot or on the BBQ. These make for excellent delicious midweek meals that are filling, tasty & affordable for the family. Simply remove from the freezer the day before, leave in the fridge (in the packet) to thaw slowly overnight.
Remove 30 mins before cooking from the fridge to bring up to temp, then lightly season before placing in a covered dish with a little water in, pop in the oven for a few hours, un-wrap, turn up the heat to crisp the skin for 15 mins, remove, rest on a wooden board for 10 minutes (to allow the meat to relax & absorb the juices), then enjoy!
These can be brined overnight or soaked in red wine then seasoned in your favourite BBQ rub before placing on the BBQ for some serious smoke & fire.
