Sherwood Pork Shanks have a generous amount of delicious soft meat on them perfectly suited for low & slow cooking.

The Pork Shanks are similar to our Pig Wings , they have an amazing flavour to very soft meat, but are cut from the back legs. These are great to cook on the bone as it gives added flavour to the meat. The pieces are **approximately 750-grams each & 2 per pack. The pack will feed 4 people with over 200-grams of meat each giving you excellent value for money.

Delicious Meaty Pork Shanks:

The pork shanks are approximate 750-grams each & have been carefully prepared by our expert butchers to have excess fat removed. These Pork Shanks are like large Pig Wings with two bones inside not just one. There is a small amount of the rind left on these to help protect the meat from drying out when cooking Low & Slow.

Meaty Pork Shanks are cut from our select pork that will guarantee great results with excellent flavour.

The 2 bones inside the Pork Shanks are exposed either end & are easily removed after cooking by pulling the meat from them, once rested for 10 minutes after the cook. Cooking the Pork Shanks on the bone helps to get a more even cook because the heat from the grill transfers into the bones & into the middle of the piece, just like cooking from the inside out.

The texture of the meat on the Pork Shanks is fibrous because these are hard working muscles supporting the weight of the animal. The best flavour comes from the coarse textured meat, but becomes very tender when cooked at lower temperatures for longer periods. When finally cooked & rested, you should be able to pull these apart with a spoon!

Smoking these on the Barbecue at home is the best way to get desired results from them, your family will love these, especially the younger ones. There is plenty of meat on the pork shanks as the bones are slender, these are packed as twin packs & competitively priced. The pork shanks are produced in clean temperature controlled cutting rooms because it is perfect to make sure we deliver the best product for the best results at home or in the restaurants. The lower temperatures stop the meat from losing too many natural juices & also help minimise the growth of natural bacteria found in meat. The products are frozen down very quickly to preserve the meat perfectly until ready to cook.

All our meat is cut & packed very quickly; this combined with the low temperatures will produce perfect meat. We place the pork shanks into recyclable clear pouches because we vacuum seal them to allow the natural juices to be sucked back into the meat. The pouches also hold the meat in shape & protect it from any other flavours.  When bringing meat up to room temperature before cooking, the pouches will prevent it from drying out or from any flying visitors!

The process from farm to fork is designed to maximise value for money & minimise waste, with welfare & the environment top of the list. All our production facilities are BRC Approved & we are always using local herds to support local farmers & keep a sustainable supply chain of quality pork.

We are very aware of trying to go greener by cutting back on the use of plastic, using one bag for 2 pork shanks rather than single packing. The clear recyclable pouches used to package your Pork Shanks are now stronger & thinner to help reduce our use of plastics to lower our carbon footprint. Both our trade & online clients recycling responsibly is a very important part of the recycling chain.

There are many breeds of pigs in the world, each with different characteristics, some large fatty ones, to small very lean types. Our choice of pig is the Pietrain Pig because it is a low cholesterol breed that has a fantastic meat to fat ratio that has excellent flavour with guaranteed results in the kitchen.

Having access to a large volume of good grade, perfect sized pork sides to choose from on a daily basis enables us to create the consistent “Restaurant Quality” pork cuts that people have come to expect from the Sherwood brand. We have daily delivery of pigs to the production facilities from long-standing local countryside farms in Belgium & Northern France.

Our select breed of pigs gets the name Pietrain from the small village of “Pietrain” in the Wallonia region of Belgium where they mainly originated from.

Our pork shanks are easy to cook in the oven, in the pot or on the BBQ. These make for excellent delicious midweek meals that are filling, tasty & affordable for the family. Simply remove from the freezer the day before, leave in the fridge (in the packet) to thaw slowly overnight.

Remove 30 mins before cooking from the fridge to bring up to temp, then lightly season before placing in a covered dish with a little water in, pop in the oven for a few hours, un-wrap,  turn up the heat to crisp the skin for 15 mins, remove, rest on a wooden board for 10 minutes (to allow the meat to relax & absorb the juices), then enjoy!

These can be brined overnight or soaked in red wine then seasoned in your favourite BBQ rub before placing on the BBQ for some serious smoke & fire. The results from this are stunning, a great way to impress your friends with something new. Just enjoy cooking these, they may be something new to the menu at home but you can rest assured you will have clean plates & smiles all across the meal table.
