The high quality Pork is very tender & has a great flavour, perfect when Smoking Low & Slow on the Barbecue. Each Rack is approximately 500g with 3-4 Ribs per rack, they are a good sized portion for 1 hungry person or great for an appetizer for 2. These are from the inside of the Pork Collar in the Shoulder where the best flavoured meat has more intramuscular fat.

These are the last few Ribs at the top of the Rib Cage in the Shoulder of Pork.
The Pork Shoulder Ribs are the same as the “Point End of Beef Brisket “ on the Bone. These Ribs are the best of the St Louis Style Ribs  & the Meaty Baby Back Loin Ribs, as a smaller portion. These generally have the meat trimmed off by butchers & used in Chinese Restaurants as a cheap Rib in Sauce….. not the best way to appreciate them. The light Pink meat on the Pork Shoulder Ribs has more fat through it giving it that delicious flavour & making them really juicy. The Ribs are approximately 9cm at their widest & 5cm at the narrow end, shaped a little like a Xylophone.
How do we cut Pork Shoulder Ribs?
These are cut from the last few Ribs at the top of the Rib Cage on the inside of the Shoulder.
Once the right sized Pigs are selected, the whole Forequarter is cut off the carcase, the Shoulder Ribs are then sawn through to separate them from the backbones. The expert butchers then cut the Ribs out of the Shoulder from the section next to the “Pork Collar” making sure to leave excess meat on the bones. The Ribs are joined together on one side as they form part of the Sternum which is like cartilage. The average width of the Shoulder Ribs is 9cm wide at the bottom & 5cm at the top.
Our Pork Shoulder Ribs are from the finest Pietrain Pigs that are well suited to making great pork ribs with guaranteed results. The colour of the meat is light pink as the farm to processing is of the highest standard ensuring a good PH level for a balanced taste.
How do we pack Pork Shoulder Ribs?
The Pork Shoulder Ribs are sealed in a Freezer Friendly plastic pouch.
Once the Pork Ribs are cut & trimmed they are sent directly to the packers, where they are immediately placed into a Clear Recyclable Plastic Pouch. The Ribs are packed in pairs bone to bone so that the packs aren’t split by the bones. The packs are then labelled with full “Farm to Fork Traceability” including production dates & best before dates. All the packs are stacked into Recyclable Boxes or Reusable Crates & sent direct to be “Blast Frozen” to -25°c over the next few hours. The shelf life of the Pork Shoulder Ribs is 2 years when stored frozen at -18°c, ideal to keep for the summer BBQ.
Packing the Shoulder Ribs into the plastic pouches straight after cutting keeps all the natural moisture in the meat, this prevents them drying out & always producing juicy flavoursome Ribs. The fast packing method with limited handling reduces extra bacteria getting on to the meat which increases the shelf life (once thawed) keeping the taste of the meat pure. The pouches stop any cross contamination from the raw meat to other foodstuffs in a domestic fridge or vice versa.
