The Monster Pork Spare Ribs are Thicker Meaty Ribs cut from the Belly of Pork without the rind or most of the fat.
The Monster Pork Spare Rib Racks are flat with a Generous Layer of juicy Belly Meat on the Bones. The meat is approximately 20 mm thick on the bones, the length of the bones is approx 25 cm & the whole Rack is approx 35 cm. These are easy to cut into portions after Smoking; using a sharp knife, just cut in between the bones & through the soft cartilage bones at the end.
The meat on the Monster Pork Spare Ribs is a little course, this cooks up to be soft, tender & easy to bite when done Low & Slow. The meaty end of the Pork Rib Rack where the bones are shorter is ideal for making Pork Candy Bites like the PBBE Pork Belly Burnt Ends. The Pork Spare Ribs have good meat to bone ratio with enough fat to give the ribs added flavour & keep them moist during your cook.
How do we cut Monster Pork Spare Ribs?
All our Monster Pork Spare Ribs are cut from Fresh selected Bone In Pork Bellies with the rind on.
To cut our Monster Pork Spare Ribs we first need to select Pork Bellies about 5 kilos, our expert butchers then remove the Rind from across the back of the Whole Belly. Once the Rind has been removed, they then take most of the surface fat from across the Belly. The Belly is then Square cut at both ends to make this into a Rack of Pork Spare Ribs. The butchers leave both layers of the Belly Rib Meat on the rack to give better value & larger portions per rib.
The dimensions & weights are variable because they are a natural meat cut that varies according to the size of the Pigs. We do try to select similar sized Bellies but, we make these in large batches using hundreds of Pork Bellies at one time & it is not always possible to keep to our preferred weight range.

The process of cutting & packaging our Pork Spare Ribs is very fast & hygienic, we only handle the ribs twice (once cutting & once packing), the whole process takes less than 5 minutes.

Sourcing our Pork locally to the cutting factories in Belgium & Poland from Northern France / Belgium & the Northern region of Poland, ensures we have a sustainable supply of high quality Pork from good welfare farms. Our choice of preferred Pig breed is “Pietrain Pig”, this is found mainly in the Wallonia region of Western Belgium & is exported to regions across Europe.
These are a Pig with a good meat yield, low in cholesterol, good muscle structure & a mild temperament. The Pork has a good flavour & texture, combined with modern day slaughtering techniques are designed to be as humane as possible, ensuring light coloured, soft meat.
