Pork Tenderloin is the whole Fillet cut from the inside of the lower rib cage next to the Loin.
The Pork Fillet is approximately 450grams & 20cm long, 6cm in diameter. It has a light Pink colour & is soft to touch, the grain of the meat is very fine because this is a muscle that’s not used like most working muscles. Pork Tenderloin is a cut of meat that is easy to roast & ideal for cutting into miniature steaks (Medallions), a great way to make luxury meals for little money.
How do we cut Pork Tenderloin?
The Pork Tenderloins are cut from inside the Rib Cage of a Bone In Pork Loin.
Our expert butchers place the whole Pork Loin fat side down with the spine bones facing upwards, next with a sharp boning knife they cut close to the bones along the length of the Tenderloin using only the tip of the knife (so as not to cut into the main Fillet Muscle), releasing the meat from the bones. The Tenderloin is then carefully trimmed up to remove the excess fat, leaving the whole Fillet Muscle in one piece.
How do we pack Pork Tenderloins?
Pork Tenderloins are singularly packaged in our Freezer Friendly Recyclable Pouches.
To keep the Meat as fresh & moist as possible, we pack these immediately once they are cut & prepared. They are “Vacuum Packed” as single pieces for convenience at home & easy freezer storage. The vacuum process seals all the natural flavour & moisture of the Pork in the meat, giving you a perfect Pork Tenderloin every time.
The Pork Tenderloins are placed into Recyclable Cardboard Boxes & “Blast Frozen” to -25°c over the next few hours.
The fast cutting & packing of the Pork Tenderloins ensures that we produce the safest meats possible, with a long shelf life of 24months. The packaging protects the Fillet from freezer burn, any cross contamination from other foods when stored in the fridge & when in transit for home or wholesale deliveries.
All our production facilities are BRCGS / IFS approved that make any of our meat cuts or products. All refrigerated air is filtered in production rooms, the butchers & packing staff wear fully protective clothing, these precautions reduce natural bacteria. The low temperatures help to keep the meat from losing its natural juices, this makes for a juicier piece of pork with a more natural flavour when opening at home.

Sourcing our pork locally from Northern France & Belgium ensures we have a sustainable supply of high quality pork from good welfare farms. Having top grade pork allows us to make “Restaurant Quality” pork cuts in larger volumes to supply homes & restaurants across the UK & Europe.
Our choice of preferred Pig breed is “Pietrain Pig”, this is found mainly in the Wallonia region of Western Belgium.
These are a Pig with a good meat yield, low in cholesterol, good muscle structure & a mild temperament. The Pork has a good flavour & texture, combined with modern day slaughtering techniques are designed to be as humane as possible, ensuring light coloured, soft meat.
The colour of our Pork is a light pink & has no discolouring from bruising or a high PH level as the pigs have been looked after from farm all the way through to processing in the best humane way as possible. This makes sure that you get a tastier more tender piece of pork that guarantees great flavour.

When cooking this piece in the oven, bring the internal temperature up to around 68°c & keep it wrapped. To prevent the Pork Tenderloin from drying out, you may wish to add a little water into the dish to help keep it moist. When ready; remove from the oven & let it rest for 10 minutes before unwrapping because it will help the meat relax & soak up the natural juices.
Roast Tenderloin can be cut in half & served as a 2-piece meal or some people enjoy carving into Medallions of Pork before serving. The Pork Fillet is a whole muscle that has not been used for anything strenuous, hence the soft tender nature of the meat.
