Information about Smoked Pork Sausages with cheese.
Our delicious Smokey flavoured Pork Sausages with Cheese (125g each) are one of our most popular sausages bought online. These are almost twice the size of a standard butchers sausage with a much higher meat content for better value & flavour. To keep our Sausages in perfect condition we have these packed in our Skin Pack Trays, perfect for bulk buying & keeping in the freezer. The 3 pack Sausages are a great sized pack as one pack will feed two hungry adults or 2 packs will feed up to six.
These packs are great for helping to reduce food waste as they aren’t too big that when you need to open 2 packs you don’t end up throwing extra away because you can leave the unused ones in the fridge for another meal as they are already cooked.
The added seasonings that make up our Pork Sausages with Cheese are mainly Cheddar Cheese, vegetables, salt & spices. This recipe is very popular in Europe & bought by many households; this is why we decided to offer them to our online family.
How do we make our Smoked Pork Sausages with Cheese?
These are made by hand in natural skins.
To make any great Sausage you need the best meat cuts, the right recipe & method. The Smoked Pork Sausages are created by selecting high quality shoulders of Pork, these are then de-boned & all the Gristle is removed. We choose to use only “Back Fat” from the Loin of Pork to add to the shoulder meat for extra moisture & flavour. Once we have the right amount of meat & fat, this is then mixed & minced once, this ground mix is then ready for the seasonings & a little water to be added.
The whole mix of seasoning, meat & water is blended thoroughly before mincing a second time, this final blend is then pumped into natural Sausage Skins. The Sausages are then placed into a Smoke Room on racks for several hours to get a good infusion of Oak Smoke into them. Once the Sausages are Smoked they are placed in a very cold fridge overnight to “Set Up” (set up; to allow the seasonings to infuse with the meat for a more even flavour).
The Sausages are then packed & Sous Vide until cooked, once cooked they are chilled down until 2°c, then they are ready for packing.
The texture of our Smokey Pork Sausages is very smooth & consistent because we make them in large batches to ensure a thorough mix.
The lean shoulder of pork muscles are very fibrous with the most flavour out of all of the cuts, this is why we use them to make our Smoked Pork Sausages with Cheese! Many sausages are made up of various trimmings to maximise profitability, but this makes them a little inconsistent in flavour & texture.
How do we pack our Smoked Pork Sausages with Cheese?
The Sausages are sealed in our Recyclable Plastic Trays.
To keep our Sausages in perfect condition, we pack these on “Skin Pack Trays”. Once the Smoked Pork Sausages have cooled down to just above freezing, they are placed on the plastic trays in 3’s. The Trays are then vacuum sealed with an invisible clear thin plastic film over the top of the meat & tray. The trays are then labelled with Full Farm to Fork Traceability before putting into Reusable Crates for our online shop or into Recyclable Boxes for wholesale orders.
The crates & boxes are then palletised & “Blast Frozen” down to -25°c, keeping the sausages in perfection condition with a 24 month frozen shelf life, when kept at -18°c.
To reduce our Carbon Footprint we are using Green Energy in production, improved cutting & packing methods to make more energy efficient & less plastic in our packaging. The trays we are now using are stronger & thinner than before & should be placed in the Recycling at home.
It is important that our customers at home or in wholesale businesses are recycling all packaging responsibly because this is the most important link in the “Recycle Chain”. We actively encourage all our customers to recycle & are always looking at new packaging ideas or ways to save energy.
All production facilities are under strict controls of the Health Vetenarians & BRCGS Approved to make our products the safest way possible.

We source locally to our production facilities to reduce our “Carbon Footprint” with lower vehicle emissions & less journey times, reducing stress levels for the pigs. Sourcing our Pork locally from Northern France & Belgium ensures we have a sustainable supply of high quality pork from good welfare farms. Having top grade Pork allows us to make “Restaurant Quality” Pork cuts in larger volumes to supply homes & restaurants across the UK & Europe.
Our choice of preferred Pig breed is “Pietrain Pig”, this is found mainly in the Wallonia region of Western Belgium.
These are a Pig with a good meat yield, low in cholesterol, good muscle structure & a mild temperament. The Pork has a great flavour & texture, combined with modern day slaughtering techniques are designed to be as humane as possible, ensuring light coloured, soft meat.
The colour of our Pork is a light pink & has no discolouring from bruising or a high PH level as the pigs have been looked after from farm all the way through to processing in the best humane way as possible. This makes sure that you get a tastier more tender piece of Pork that guarantees great flavour.

As these are already cooked, it is a simple matter of heating them up till at least 72°c inside, this can be tested with a simple temperature probe. You can have a tasty meal in a matter of minutes with these sausages, kids love the flavour & it gives them plenty of energy.
The easiest way to cook Sausages is under the grill, in the frying pan or in the Air Fryer. As the Sausages are already Smoked, you can get the fastest results in the Air Fryer, we recommend this as it is usually the most energy efficient.
