Information about Unsmoked Pork Hocks.

The Pork Hocks or Schweinshaxe are a particular favourite dish in Germany, & they have some excellent recipes for Pork Hocks in many of their restaurants. Most people cook these in their slow cooker & some prefer to roast their Pork Hocks in brown ale or a strong beer until they are “Fall Apart” tender. These are a meaty small joint of pork weighing 1Kilos, that would normally be eaten with cooked vegetables.

Our Unsmoked Pork Hocks are cut exactly the same as our Smoked Pork Hocks, from the back leg. The piece is cut from between the trotter & the Leg at the upper joint, leaving a single bone inside. The Unsmoked Pork Hocks has a generous amount of meat on them with the rind left on to protect them when cooking. The rest of the leg is made into half  Horseshoe Gammons & cured the same way; these are also available for home delivery.

The natural vitamins, minerals & protein found in good quality pork is essential towards a balanced diet, helping with energy levels, digestion, & general fitness. The Unsmoked Pork Hocks has the skin on the outside with a little fat for extra flavour around the meat. These are not too fatty as a cut of meat, the meat is fibrous & is a great source of protein.

Pork Hocks have different names across the world when they are raw or cooked, these are a few of them; pork knuckles, pork shanks, or ham hocks. The ham hocks are the name given when they are cooked, & can be from the front or back legs, ours are from the back legs because there is more meat on them for better value.

There are many options & recipes for cooking Unsmoked Pork Hocks, from simple traditional boiling in hot water with vegetables for a couple of hours to oven roasted (with internal temp of 75°C 2-3 hrs). A good Barbeque Rub or seasoning two hours before putting on the Barbeque for some Low n’ Slow cooking, is one of the best ways to cook most things. The flavour is absolutely stellar when finished, the meat absorbs those smokey aromas & the texture is very soft.

We have added a few links in the How to Cook Tab for you to try new recipes making your Unsmoked Pork Hocks truly delicious!

It is very simple to make cured Unsmoked Pork Hocks, the curing process is “brining the meat”, which is leaving these in salt water to absorb the salt changing the texture of the meat. The Pork Hocks are injected with a special Brine mix before they are left in very cold chillers over a few days to get the meat to absorb the added flavour of the brine mix. They are then removed from the brine tanks & left to hang in chillers to drain the excess water from them.

Your finished Unsmoked Pork Hocks are now ready to be packaged. Vacuum sealed into clear recyclable pouches before dipped quickly into hot water to allow the pouch to shrink tight against the meat, pulling the piece together more. The process will keep the meat from losing any of its natural juices into the bag.

Your Unsmoked Pork Hocks will arrive to your door just like they were produced & stay like this frozen at home until the day when you want to cook them. The pouches maintain & protect the piece when being frozen down to -18°c after packing, then during the delivery, whilst in your fridge / freezer at home & when bringing up to temperature before your cook.

All our production facilities are BRCGS Approved with strict health & hygiene conditions, to ensure that all our meat cuts are safe with a natural flavour. The temperatures of the production rooms are only a few degrees above freezing keeping the meat very cold, to slow the process of natural bacteria growth & to prevent the meat from losing its natural juices.

Keep frozen at -18°C
Keep refrigerated at 3°C use within 3 days
Defrost thoroughly before use

All butchers & production staff are completely covered in protective clothing, with mandatory health checks to protect the meat from any form of contamination. Creating our Unsmoked Pork Hocks this way, gives you the best results when cooking at home.

Supply chains are always important & this is why we use local herds from sustainable farms with a better selection of quality Pigs. The volumes required in production give us the opportunity to select the right grades to make different cuts for leaner or fattier cuts. Having suppliers closer to production lowers vehicle emissions & reduces stress levels for livestock, this gives better, more tender meat with no bruising.

Pork Hocks have been an inexpensive piece to cook at home for a long time, they always eat very soft & have a delicious flavour the whole family enjoys. Having items like Unsmoked Pork Hocks available to buy online for next day delivery in the UK is great for our customers food budgets. It is not easy trying to feed the family tasty meals that are less expensive to make, the Good Old fashioned Pork Hock is perfect for easy, inexpensive home cooked meals.

The Unsmoked Pork Hocks are a great value for money cut of Pork & we are able to offer these at a better price because we produce in volume. As we make large batches of these & our cost per piece is cheaper than the butchers, we are able to pass on these savings. See how Sherwood Foods gives you more meat for your money #moremeatfym. Running an efficient production room helps to reduce costs & lowers the energy required per piece, this then helps to reduce our Carbon Footprint.
