The Pork Hocks or Schweinshaxe are a particular favourite dish in Germany, & they have some excellent recipes for Pork Hocks in many of their restaurants. Most people cook these in their slow cooker & some prefer to roast their Pork Hocks in brown ale or a strong beer until they are “Fall Apart” tender. These are a meaty small joint of pork weighing 1Kilos, that would normally be eaten with cooked vegetables.
Our Unsmoked Pork Hocks are cut exactly the same as our Smoked Pork Hocks, from the back leg. The piece is cut from between the trotter & the Leg at the upper joint, leaving a single bone inside. The Unsmoked Pork Hocks has a generous amount of meat on them with the rind left on to protect them when cooking. The rest of the leg is made into half Horseshoe Gammons & cured the same way; these are also available for home delivery.
The natural vitamins, minerals & protein found in good quality pork is essential towards a balanced diet, helping with energy levels, digestion, & general fitness. The Unsmoked Pork Hocks has the skin on the outside with a little fat for extra flavour around the meat. These are not too fatty as a cut of meat, the meat is fibrous & is a great source of protein.

A good Barbeque Rub or seasoning two hours before putting on the Barbeque for some Low n’ Slow cooking, is one of the best ways to cook most things. The flavour is absolutely stellar when finished, the meat absorbs those smokey aromas & the texture is very soft.

It is very simple to make cured Unsmoked Pork Hocks, the curing process is “brining the meat”, which is leaving these in salt water to absorb the salt changing the texture of the meat. The Pork Hocks are injected with a special Brine mix before they are left in very cold chillers over a few days to get the meat to absorb the added flavour of the brine mix. They are then removed from the brine tanks & left to hang in chillers to drain the excess water from them.
Your finished Unsmoked Pork Hocks are now ready to be packaged. Vacuum sealed into clear recyclable pouches before dipped quickly into hot water to allow the pouch to shrink tight against the meat, pulling the piece together more. The process will keep the meat from losing any of its natural juices into the bag.
Your Unsmoked Pork Hocks will arrive to your door just like they were produced & stay like this frozen at home until the day when you want to cook them. The pouches maintain & protect the piece when being frozen down to -18°c after packing, then during the delivery, whilst in your fridge / freezer at home & when bringing up to temperature before your cook.
