The intramuscular fat content of the Brisket Points is much higher than the Flat section, this fat adds flavour & moisture when Smoking Low & Slow. Most restaurants buy Grain Fed Beef because this is much fatter, the Brisket Points from our Grass Fed Irish cattle has a different, more Beefy flavour with better yields.
The Brisket Points improve when they are aged in the vacuum bags; these are perfect when 4-6 weeks old. The meat fibres breakdown further & they are “Melt in your mouth tender” when Smoked. We pack these fresh off the production line & keep them deep chilled, this gives them a longer fresh shelf life.
