Wholesale Beef Rump Steak, full primal cut without bones as a D-Cut Rump ready for slicing.
The Rump is cut from the Hind Quarter between the Sirloin & the Thigh, it is a more coarse cut than the Sirloin but, has great flavour. The expert butchers cut these as a “D Cut Rump” specification. This is cut 3 fingers from the Aitch Bone across the face (this reduces cutting into the round cuts) & the back is cut close to the Sirloin, with the Rump Tail removed.
Wholesale Beef Rump Steak is one of the cheaper cuts of Steak found on menus, it is a wide cut that is usually cut in half when served. Some Restaurants split the Whole Beef Rump into 2 parts; the Rump Heart & the Picanha Steak (Rump Cap). The Rump Hearts usually have the outer fat removed for a completely fat free smaller Steak. The Picanha section is Smoked on the Barbecue & sliced afterwards.
