The Whole Beef Sirloin is cut from in between the Fore Rib & the top of the Rump Steak, these are a Prime Steak cut. The Sirloin has an outer layer of fat across the outer top edge of the eye of the meat. Expert butchers bone out Beef Loins to make these Chain on (intercostal fat from the back bones) & tight to the eye approximately 2-3cm. The tight specification on our Beef Sirloin helps chefs to cut Beef Steaks with little or no waste to get better value for money.
The Boneless Wholesale Beef Sirloins are weight graded to give the choice to chefs so they can buy Sirloin according to the size & thickness of the Steaks they need. We offer Whole Sirloins from 4- 8 Kg, the most popular weight selected is 6Kg, these tend to be the more expensive, though you can get excellent prices for the larger ones. We make large production numbers of all primal Steak cuts to accommodate for customers that need to buy pallets of Whole Sirloins, such as Caterers or large Butchers, ready meal companies.
The Boneless Beef Sirloin can be aged before cutting in our chillers to help soften & improve the taste of the meat. All of our Beef Steaks (Ribeye, Rump, Tri Tip, Cowboy) are cut from the better graded Beef that has a good fat finish for more tender flavoursome meat.
