Our Salt Beef Brisket is made from our Irish Grass Fed cattle, the Briskets are cut & prepared by expert butchers, before brining for 7 days. The high quality Beef gives great texture to the Briskets, the Brining or Curing process brings out the flavour & the slow cooking process makes the Briskets very tender.
The process of making Briskets into Salt Beef is 2 stages; the first stage is to inject the meat with a Brine Solution evenly across the whole piece, second stage is to place them into Brine barrels for 7-9 days, this gives the Briskets time to release the excess water & achieve a natural balance of Meat & Brine Solution.
Most commercial Salt Beef is 30% extra weight of Brine Solution because it is injected & bagged with all the excess Brine Solution in the meat.
The natural Salt Brisket we have is 15%, giving a higher meat to Brine ratio & better value for money.
The raw Whole Salted Briskets are approximately 5-7Kg & ready to cook in the bag. The cooking time for Salted Brisket is 30 minutes per 500g, once cooked, remove the Brisket from the bag & rest on a wooden board covered over. Our Salt Beef is easy to cut across the grain to serve sliced for a Salt Beef Sandwich.
Our Wholesale Salt Beef Briskets have full Farm to Fork traceability, slaughtered, cut & packed with BRC & IFS approval. We offer these Vacuum Packed in singles for Retail & wholesale Restaurant Customers.
