The Lamb Livers are prepared immediately after harvesting; the excess tubes are removed with the Silver Skin cut from the sides, leaving a cleaned Liver that is ready for slicing. Liver is still a popular item on Restaurant Menus & offered as part of a full English Breakfast, Fried Liver & Bacon is a traditional dish.
