Beef Flank Steak is a great inexpensive Skirt Style Steak that can be used in so many different ways & comes ready to use with no waste. The Flank Steak or Bavette de Flanchet as it is called in the trade, is a delicious cut that is lean, tender & easy to use at home. The Flank Steak as the name suggests, is from the flank or sides of the cow. These are oval in shape & approximately 25mm thick & 150 mm long.
What is a Beef Flank Steak?
This is a single muscle that is flat & not too thick, an oval shaped piece that comes prepared with no fat on it.
It has a similar grain to the meat like Pork Belly & is easy to slice before & after cooking. There are no sinews in the piece as it is one single muscle, this makes it especially good for using in dishes like Stir-fry’s, sizzling Steak strips, sandwiches etc. Our expert butchers remove all fat from the outside of the steak so that you don’t have to do any trimming at home.
The Flank Steak is a natural cut, the size depends purely on the size of the cow. We produce large quantities of these & to keep the price lower we take a natural selection as they come from the production room. We produce more of these once the stocks are very low, this keeps the rotation of the meat fresher.
Where does the Beef Flank Steak come from & how is it cut?
Flank Steak comes from the sides or flank area of the cow.
The Flank Steak is cut as a single piece from the Flank. The whole Flank section is cut from the Hind Quarter half of the Beef carcase & when laid flat you can see the Steak near one edge. The membrane is removed & the muscle is cut out carefully without slashing it & has all the outer fat removed on a special machine. This is called PAD; prepared & degristled. The Steaks are placed into recycled cardboard boxes or our reusable plastic crates & “Blast Frozen”to -25°c. This process is the best way to preserve meat as it is from when first cut, it also stops the enzymes in the meat from breaking it down & helps those with Histamine issues.
The Clear Recyclable Pouches are helping to “Reduce our Carbon Footprint” because we are now using stronger thinner bags, reducing the amount of plastic used. We actively encourage our customers to recycle responsibly as this is the most important link in the recycle chain, getting all the packaging recycled.
