Information about Duck Breasts.
Duck has been regarded as a delicacy by chefs & a treat for home by housewives, the rich dark meat has so much more flavour than chicken. Our ready prepared Boneless Duck Breasts are approx 180g each with the skin on. The twin packs are easy to store in the freezer & convenient for thawing out slowly in the fridge ready to make a delicious dinner for two people. The high quality meat has a good texture without any added water to ruin the flavour.
What are Duck Breasts?
These are the meaty front part of the Duck covering the rib cage.
The Duck Breast is oval in shape & completely boneless with the skin on. The meat is dark in colour, similar to Venison. These have a fairly fine texture to the meat & is like cutting a steak once cooked.
How are Duck Breasts made?
The Breasts are cut from the top of the Breast Bones, sometimes called the Crown.
Before any cutting can take place the Duck carcasses are completely cleaned & hung in chillers overnight to bring their core temperature down to a few degrees above freezing. The Ducks are sent to clean production cutting rooms where they are cut into the individual portions, legs, necks & breasts. The Breast Meat is carefully separated from the Breast Bone as a single piece before splitting down the middle to leave individual Breasts.
How are our Duck Breasts packed?
The Boneless Duck Breasts are Vacuum Sealed in Recyclable Plastic pouches.
The Breasts are stacked on top of eachother with the exposed meat sides together & the skin on the outside.
The Duck Breast Fillets are packed within a few minutes of being freshly cut & Blast Frozen, this keeps the moisture & flavour in the meat. The Breasts are vacuum packed & are all “Quick Frozen & sealed into Recyclable Plastic Pouches. The bags are then labelled with full traceability & packed into recycled cardboard boxes.
The boxes are palletised & kept frozen at -18°c, giving a 2 year shelf life when kept below -18°c. Please see this link about Blast Freezing & the benefits when freezing meats; The Benefits of Blast Freezing Meats.
The Recyclable Pouches protect your Chicken Breasts from any damage during delivery, any contamination from other foodstuffs in your fridge & they are perfect for frozen storage. The pouches now used are stronger & thinner than before as we are reducing our Carbon Footprint for a Greener Future. Less packaging means less energy needed to make & recycle plastic.
To further help us towards our goal for a Greener Future, we ask that all our wholesale & online customers recycle responsibly.
All our production plants are BRCGS / IFS approved & operate under the strictest of conditions. Monitored by on site health vets to ensure all cutting & hygiene practises are followed at all times. The temperature controlled cutting rooms with filtered air means we can reduce natural bacteria growth & produce safer products with a longer shelf life. How do you cook Boneless Duck Breasts?
To use your Duck, place into the fridge a few days before cooking, to defrost slowly.
The best way to thaw out the Breasts is to leave them in their pack at the bottom of your fridge to thaw out slowly, because the meat relaxes gradually not damaging the cells in the meat & leaves you with lovely fresh Duck. You can partially thaw the bag & separate the Fillets if you only need one piece.
Firstly, remove the Breasts from the fridge 30 minutes before cooking, this brings the internal temperature of the meat up & relaxes the meat fibres. This first step is important when cooking with any meats because you get a more even cook with tastier juicy results.
Duck Breasts can be cooked in the oven, in the pan, Air Fryer or on the Barbecue. Cooking in the pan is quicker & easier to get a delicious crispy outside. Grilling Duck Breasts on the Barbecue is a treat if you love Smokey tasting meat with delicious grill marks.
