Information about Pig Feet.
The Pig Feet or Trotters as they are also referred to are a cut of meat favoured by the Asian or Caribbean community. The Feet are an inexpensive cut of meat that affordable for lower income families & some amazing recipes have been created over the years. The Feet are a bone in skin on cut of meat that is easy to stew or braise at home, the meat is succulent & flavoursome. The Pigs Trotters are approximately 400g each with 5 pieces packed in our Freezer friendly Recyclable Bags.
What are Pig Feet?
These are literally the Foot or Trotter of the Pig.
The Feet we are offering are from the Front Legs or Shoulder, these are cut shorter & have more meat on the bone. Our Pig Feet are a natural cut & unsalted. The Pork Front Trotters are 400g average weight per piece, cut from 90-100Kg whole Pigs as a bone in meat cut.
How do we cut Pig Feet?
The Pig Feet are cut from the from shoulder through the joint.
The Sides of Pork are cleaned & prepared (de-haired) before placing into the chillers, the Trotters are cut half way through the knuckle joint to let out the heat from the bones easier. The whole Sides of Pork are chilled down to 2-3°c before any cutting commences. Once chilled the shoulders of Pork are cut from the front end of the Pork Sides, the Pig Feet are carefully finished cutting through the knuckle joint to remove them from the shoulders.
How do we pack our Pig Feet?
We pack our Front Pig Feet in plastic bags.
The Pig Trotters are packed 5 per pack in our freezer Friendly Recyclable Plastic Bags. Each Foot weighs approximately 400g & each pack is roughly 2Kg. These are a natural cut of meat & no two Trotters are the same size, this does lead to variations in bag weight (this is why we sell these by the 5 pieces per pack). Once the Feet are packed they are labelled with Full Farm to Fork Traceability.
The packs of Feet are placed into reusable crates or recyclable boxes & placed onto pallets. These pallets are then Blast Frozen to -25°c & now have a Frozen Shelf Life of 24 months when kept at -18°c, staying as fresh as the day they were cut. The cutting & packing process is designed to minimise moisture loss (flavour) from the meat & reduce natural bacteria growth.
We are very aware of trying to go greener by cutting back on the use of plastic, using one bag for 5 Pork Feet rather than single packing. The clear recyclable pouches used to package your Pig Trotters are now stronger & thinner to help reduce our use of plastics to lower our carbon footprint. Both our trade & online clients recycling responsibly is a very important part of the recycling chain.
All our production facilities are BRCGS / IFS approved that make any of our meat cuts or products. All refrigerated air is filtered in production rooms, the butchers & packing staff wear fully protective clothing, these precautions reduce natural bacteria found on surfaces.Â
Do Pig Feet give good value for money?
Pigs Feet are a cheap price per kilo & have plenty of meat on the bone.
The Pork Feet are ready to cook & short cut with only the bones as waste. We produce them as a wholesale meat cut & pack them in loose retail sized packs at a great price. The wholesale production allows us to make big savings on the cost of the raw meat, the packaging, transportation, labour, Green Energy etc.
Provenance of our Pork.
We source all our Pork close to our production facilities to reduce our “Carbon Footprint” with lower vehicle emissions & less journey times, reducing stress levels for the pigs. Sourcing our Pork locally from Northern France, Belgium & Poland ensures we have a sustainable supply of high quality Pork from good welfare farms. Having top grade pork allows us to make “Restaurant Quality” pork cuts in larger volumes to supply homes & restaurants across the UK & Europe.
Our choice of preferred Pig breed is “Pietrain Pig”, this is found mainly in the Wallonia region of Western Belgium, these are exported as sides across Europe because of their meat to fat ratio.
These are a Pig with a good meat yield, low in cholesterol, good muscle structure & a mild temperament. The Pork has a good flavour & texture, combined with modern day slaughtering techniques are designed to be as humane as possible, ensuring light coloured, soft meat.
The colour of our Pork is a light pink & has no discolouring from bruising or a high PH level as the pigs have been looked after from farm all the way through to processing in the best humane way as possible. This makes sure that you get a tastier more tender piece of Pork that guarantees great flavour.
What is Ultimate PH and how does it influence Meat Quality?
How do you cook Pig Feet?
The preferred way to cook Pork Feet is boiling in stews or braising slowly.
These are similar in nature as the Pigs Tails, they are cooked as a piece or cut into smaller pieces for stewing. The slow cooking of the Feet helps the Fibrous Meat to breakdown becoming very tender & fall off the bone easily. Sherwood Pig Feet are natural & unsalted, no need to soak them for days to remove any Slat.
