Our Chicken Thighs on the bone are cut from A Grade natural Chicken & have the skin on. These delicious “Oyster Cut Thighs” have more meat & a single bone, they weigh approximately 130 grams per portion. We pack multiple portions in our special Recyclable Clear Pouches to keep in perfect condition at -18°c for 2 years. There is more meat for your money with an Oyster Cut Thigh, you can create better tasting value meals at home for less.
How do we cut Chicken Thighs on the bone?
We select larger Chickens to make generous sized Thighs & remove the Whole Leg as an “Oyster Cut” piece.
Oyster Cut is our preferred way to cut the Thigh or Whole Leg from the main carcass because it leaves more meat on the Thigh. The Drumstick is then separated from the Thigh through the joint carefully so as not to damage the ends of the bones & create bone fragments. Only excess fat is removed & the skin is left on but trimmed down to leave an even cover over the Thigh Meat.
The “Chicken Oysters” are left on the top of the thigh for extra dark meat flavour, with a single (femur) bone for added “on the bone flavour”. We leave the skin on the thighs because this protects the meat from drying out during cooking, also has amazing flavour when Crispy Golden Brown. Turning the heat up at the end of your cook & exposing the skin will give you this special little treat.
The Thighs are approx 120g+ each; these are a natural product & size varies according to the size of the whole chicken.
This is the same way we produce our ready made Boneless Chicken Thighs. All the Chicken is at 1-2°c internally before any cutting commences, this keeps more of the natural juices inside the meat, creating a better flavour & texture. The Chicken Thighs are produced at source to keep the meat as fresh as possible when cut.
How do we pack Oyster Cut Chicken Thighs?
The Bone in Thighs are inspected for any bruising, discoloration or broken bones before any packing.
Only a few minutes after cutting & with minimal handling (to reduce cross contamination) the Thighs are vacuum sealed into Recyclable Clear Freezer Friendly Packs. There are Multiple Portions & approximately 5Kg’s per pack. The Thighs are then labelled with Full Traceability & QR code to the website recipes & nutritional information.
Once these are packed the next stage is to place the packs into clean recyclable cardboard boxes, these are then stacked onto pallets & put into a “Blast Freezer” until they are frozen to -18°c.
These Freezer Friendly Vacuum Packs are the best way to keep your Chicken safe from freezer burn or contamination of other foodstuffs at home. The vacuum sealed Chicken Thighs have a 2 year shelf life when kept frozen because they have minimal exposure to the air & cross contamination when packed.
The speed of production & packing, combined with the low temperatures of the production rooms helps reduce the natural loss of moisture from the meat. The moisture retention of the Bone In Thighs is key to keeping its flavour & to prevent them from drying out during cooking. Having built up relationships with local Chicken farmers, the chickens supplied very consistent in size & quality, & able to meet our demands for higher volumes when needed. Keeping the supply chain as short as possible helps reduce our energy consumption & overall production costs.
All the local farms that supply production meet the highest European standards as quality & safety are our main priorities when buying our chicken. The chickens are checked & monitored 24 hours a day in temperature-controlled environments. The Chicken Sheds are very large & well ventilated so that the chickens have room to move about. With a controlled diet the chickens grow to healthy sized birds that produce a good yield.

How do you cook Bone In Oyster Cut Chicken Thighs?
Chicken Thighs are quite forgiving when cooking because they are naturally moist & don’t dry out as quick as other Chicken cuts.
We love Barbecued Meats, & Bone In Thighs on the grill with that awesome Smokey flavour….. are simply delicious. You can cook these in the oven on a wire rack, place them in a casserole on a low heat or a quick cook in the Air Fryer. There are many Chicken Thigh Recipes & videos online showing how to get the best results.
Cooking Chicken Thighs on the bone times & temperatures :
- 15-20 minutes when baked in the Oven at 210°c.
- 15-18 minutes in the Air Fryer at 200°c; spaced evenly in the basket
- 10-12 minutes in the Pan on a high heat; turn to prevent burning
- 20-25 minutes on the Barbecue or under the grill; using indirect heat, moving to direct heat to finish
Make sure that there are NO pink bits of meat or bone & all the juices run clear before eating. An ideal safe internal temperature when cooked is over 75°c.
