Information about Pig Tails.
Pigs Tails are a delicacy enjoyed by the Caribbean & Asian community, they create amazing dishes full of flavour & colour with these. The most common way to cook a Pigs Tail is either Braised or Stewed, the meat becomes “fall off the bone” tender. We cut these as a wholesale product & pack them in 2 Kg bags for easy storage at (-18°c) home. The Tails are Short & Thick with more meat in them than the long skinny ones, this offers better value for money.Â
What are Pigs Tails?
As the name suggests, they are the Tail of the Pig.
These are a bone in meat cut that are approximately 130g each, our ones are short & thick with a higher meat content. The Tails are cleaned & a light Pink in colour with no hairs & ready to cook.
How do we cut our Pig Tails?
The Tails are cut from the end of the spine.
Once the sides of Pork are cleaned & chilled down to a temperature of 2-3°c, they are then sent for cutting. The Tails are then cut from the Leg of Pork a couple of vertebrae in so they have more meat on them.
How do we pack our Pig Tails?
The Pig Tails are loose packed in plastic pouches.
We pack the Tails in Clear Recyclable Freezer Friendly Plastic Bags, these are then labelled with full Farm to Fork Traceability. The packs of Tails are boxed, palletised & Blast Frozen to -25°c. The Pig Tails have a Frozen Shelf Life of 24 months when kept at -18°c, they will be as fresh as the day they were cut. The cutting & packing process is designed to minimise moisture loss (flavour) from the meat & reduce natural bacteria growth.
The plastic bags we use are thinner & stronger in an effort to reduce the amount of plastic we use throughout the year, this reduces our Carbon Footprint. We try to use plastic crates that can be reused many times & saves on the amount of cardboard used.
All our production facilities are BRCGS / IFS approved that make any of our meat cuts or products. All refrigerated air is filtered in production rooms, the butchers & packing staff wear fully protective clothing, these precautions reduce natural bacteria found on surfaces.Â
Are Pig Tails good value for money?
Short cut Pig Tails are good value as they are a wholesale meat cut.
The Tails are short cut ones with more meat & thicker, fully cleaned & prepared by our expert butchers ready to cook at home. As we cut our meats in wholesale production, we can produce these much cheaper in larger volumes. The cost savings on labour, green energy, packaging & transport to produce the Tails are passed on to our wholesale & online customers, giving a reduced price per kilo.
Provenance of our Pork:
We source all our Pork close to our production facilities to reduce our “Carbon Footprint” with lower vehicle emissions & less journey times, reducing stress levels for the pigs. Sourcing our Pork locally from Northern France, Belgium & Poland ensures we have a sustainable supply of high quality Pork from good welfare farms. Having top grade pork allows us to make “Restaurant Quality” pork cuts in larger volumes to supply homes & restaurants across the UK & Europe.
Our choice of preferred Pig breed is “Pietrain Pig”, this is found mainly in the Wallonia region of Western Belgium, these are exported as sides across Europe because of their meat to fat ratio.
These are a Pig with a good meat yield, low in cholesterol, good muscle structure & a mild temperament. The Pork has a good flavour & texture, combined with modern day slaughtering techniques are designed to be as humane as possible, ensuring light coloured, soft meat.
The colour of our Pork is a light pink & has no discolouring from bruising or a high PH level as the pigs have been looked after from farm all the way through to processing in the best humane way as possible. This makes sure that you get a tastier more tender piece of Pork that guarantees great flavour.

How do you cook Pig Tails?
The common choice for cooking Pigs Tails is to Stew / boil them or Braise in the oven.
Stewing or Boiling the Pig Tails takes several hours for making stews or soup type dishes. Braising the Tails wrapped in Aluminium & finishing unwrapped gives them amazing colour, crispy Skin & tender meat. The Pork Tails are a slow cooking type of meat with juicy flavoursome meat on the bone.
How to prepare your Pig Tails for cooking:
- Place the Tails in the fridge to thaw slowly in the bag.
- Remove the tails once thawed & rinse under cold water
- Pat the Tails dry with paper towel & season.

Are Pig Tails nutritious?
The Tails are a fatty meat cut but, the Pork meat is nutritious.
Pork is a Red Meat & has the usual health benefits as a good source of Protein, Vitamins & Minerals, the fat is not so good for your health. The fat is needed to add flavour when cooking, you can trim this off but we would advise to leave on as it keeps the meat moist. This cut of meat is best served as a special occasion meal rather than an every day regular type of food.
