Information About Beef Fillet Tails.
Fillet Tails come from the Tenderloin or Whole Fillet, which, as most people know is the softest muscle & the most expensive of meat cuts. Fillet Tails are a popular, leaner cut with chefs as they use these in many luxury dishes for their menus.

What are Beef Fillet Tails?
Beef Fillet Tails are the “tapered” opposite end from the “rump end” of the “Whole Fillet”. These are the last portion that is not thick enough to cut into individual Fillet Steak portions, but is superb for cutting into “Steak Strips” or small cubes.
The Whole Fillet has 3 sections: the tails, the middle & the top. Each section has different uses, the Top or Rump End is usually used for Beef Wellingtons, the middle is for cutting into Fillet Steaks with the Tails for Steak Strips.
Beef Fillet Tails Flavour & Texture.
Beef Fillet is a single muscle that is not a hard working muscle like Shin or Leg that has a coarse texture, instead, it has a smooth “fine grain” that is easy to cut through. The texture is soft & easy to break apart when cut across the grain, the fibres are thin, breaking easily because it is not a strong muscle. The flavour of the Fillet Tails has a mild Beefy taste that works well with simple seasoning.
How do you use & cut Beef Fillet Tails?
These are best cut across the grain into short sections approximately 3 cm long because it makes the fibres shorter, breaking them up allowing the cooking process to make them fall apart easier when eating. The 3 cm sections can then be cut into Strips or Cubes to use for faster cooking, & to help your added ingredients infuse into the meat more evenly, giving better results.
