Beef Oxtails are a timeless traditional cut with their distinctive deep rich flavour & very tender meat. The Whole Oxtail is made up of multiple small pieces of bone joined together by soft cartilage, best suited for low & slow cooking. The Whole Oxtail weighs approximately 1-1.3Kg & the excess fat removed from the outside to create a better value for money product. The Oxtail has been packed very fresh from the abattoir into Vacuum Sealed bags & frozen overnight.

Each Beef Oxtail is approx 1-1.3Kg these are a natural product & not manufactured like a Burger, they are all a little different in size.

What are Beef Oxtails?

The Beef Oxtail is the long tail of the cow on the bone.

The Oxtail is comprised of round pieces of bone with delicious fatty meat on the outside of the bones. The Oxtail is thickest where it is attached, tapering down to a fine point. The humble Beef Oxtail is a traditional cut of meat that historically, has always been a more affordable meat used for cheaper recipes. The lower classes bought cuts of meat like this as they were cheaper & easy to make into simple, nutritious meals.

What is the meat like on Beef Oxtail?

The meat is fibrous with a strong rich flavour, because of the fibrous nature of the meat it is very tender when cooked for longer at lower temperatures. These are, as the name suggests, the Beef Tails & as they don’t really do much apart from swaying in the wind, the meat is very much like pulled pork when cooked. It has a gelatinous texture that is very moist & is easily removed from the bone to pull apart & serve.

How do we cut Whole Beef Oxtails?

The Oxtails are made as a full piece on the bone, ready to slice.

The Full Oxtail is removed in the slaughter room when still hot, the excess fat is removed & the fine small sections are cut off (there is no meat on the fine pieces). The oxtails are then hung on racks & placed into high airflow fridges, this brings the temperature down very quickly ready for packing.

Most Butchers or Supermarkets sell Beef Oxtail as individual sections pre sliced. We choose to sell Oxtail as a whole piece because the meat looses its colour very quickly after cutting, also the meat dries out when cut. The best part about buying Whole Beef Oxtails online is; you can easily cut fresh pieces at home. To cut these is very simple, you just cut in between the bones through the soft cartilage & you have fresh cut oxtails in your kitchen!

How are Beef Oxtails packed?

The Oxtails are folded in half & Vacuum Packed singularly.

Once the temperature of the Oxtails are down to just above freezing, they are removed from the fridge & taking to a clean packing room. The Oxtails are cut in the middle joint (not all the way through) & folded over before placing onto a narrow Freezer Friendly Bag. The Oxtails are folded in half to reduce the size of the piece for convenience at home but, they will stay colder for longer when shipping to your door.

The Oxtails are Vacuum Sealed in the bags to keep them as fresh as the day they were packed, the packaging locks in all the flavour & natural meat juices. Once sealed, they are placed in Recyclable Carboard Boxes or Reusable Plastic Crates, palletised & “Blast Frozen” to -25°c. The process from cutting to packing of the Oxtails is designed to get them as cold as possible quickly & keep them in perfect condition once packed. Blast Freezing the meat gives the Oxtails a 24 month frozen shelf life, when kept at -18°c.

Our production plants & slaughterhouses producing our meat cuts or products are BRCGS / IFS approved . All the air is filtered & refrigerated coming into the production rooms, the butchers & packing staff wear fully protective clothing, these precautions reduce the transfer of natural bacteria. Operated with the highest hygiene & temperature controls to ensure you enjoy the same taste & texture from all our meats.

The Freezer Friendly Bags protect the Oxtails in the delivery box, freezer burn when stored at -18°c & contamination in your fridge from other foodstuffs. The packaging holds all the natural juices inside the Steaks when thawing out (in the fridge) & when you are bringing them up to room temperature before cutting & cooking.

We use stronger & thinner Recyclable Plastic Bags to pack the Oxtails to help reduce our “Carbon Footprint”, we use 30% less plastic than previous packaging. Provenance of our Beef.

We source all our Irish Grass Fed Beef from farms local to production in Ireland. The slaughterhouses / production plants are constantly supplied with a sustainable supply of top quality cattle. Local farmers have long term relationships with production to ensure continuity of supply all year round.

Our Irish Grass Fed Beef enjoys some of the best green pastures that Ireland has to offer, with the higher than average rainfall there is never a shortage of lush grass for them to enjoy. The welfare of all the cattle is very important not only to the livestock but to the results it brings to the table. The process from farm to finished product is always very humane & efficient.

The select choice of breeds we use for our cuts; Charolais, Limousin, Angus, & Hereford, having good confirmation & delivering good yields. Most Beef farmers & producers raise their cattle under “Bord Bia” guidelines. All our beef is fully traceable from farm to fork, with all cattle having digital passports, showing farmers details, breed, welfare etc.
